Ingredients

Serving size: 2

8 oz extra firm tofu
3 Tbsp low sodium soy sauce
2 Tbsp peanut butter creamy reduced fat
3 garlic cloves; peeled & minced
1/2 tsp sesame oil
1/2 cup cornstarch
Salt and pepper
2 Tbsp Cooking oil
Chopped Peanuts for topping

Instructions

Remove 8oz extra firm tofu from its packaging; use paper towels or a clean dishcloth and wrap it around the tofu. Put something on top (A bowl or plate) to “press” or absorb the moisture while you prep the sauce.
In a small bowl add 3 Tbsp low sodium soy sauce, 2 Tbsp reduced fat peanut butter, 3 minced garlic cloves, 1/2 tsp sesame oil and mix. Set aside
Cut the tofu into cubes(about .75 inch cubes). Add 1/2 cup cornstarch onto a plate. Place the tofu cubes on the plate and gently mix until all sides are coated with cornstarch (do in batches if needed).
Drizzle in the cooking oil in a large nonstick pan over medium high heat. Once hot, cook the tofu about 8-10 minutes, flipping the tofu often getting every side lightly fried. Transfer to a plate, season the tofu with a pinch of salt and pepper
In the same pan, pour in the sauce and cook about 1 minute; mixing often. Turn off the heat and add the tofu back to the pan. Gently mix until coated. Enjoy with rice, noodles, in a wrap or salad and more!
