First cherries of the season! 🍒 Pairing them with earthy walnuts and goat cheese is my favorite way to celebrate May. Pro-tip: Toast the walnuts with a little honey first.

What You'll Need:
2 cups spinach
1 cup pitted cherries
1/2 cup walnuts
2 oz goat cheese
balsamic glaze

Steps:
1. Toast walnuts in a pan for 5 mins.
2. Layer spinach, cherries, and goat cheese in a bowl.
3. Add walnuts.
4. Drizzle with balsamic glaze.

May stone fruit has arrived! 🍑 These apricots are perfectly tart, especially when paired with a salty pistachio crust. It’s light, honey-glazed, and basically spring on a plate.

What You'll Need
1 sheet puff pastry
6 fresh apricots (halved)
1/2 cup crushed pistachios
3 tbsp honey
1 egg (wash)

Steps
1. Roll out pastry
2. Arrange apricots on top
3. Sprinkle with pistachios
4. Brush edges with egg wash
5. Bake at 400°F for 20-25 mins
6. Drizzle with honey while warm!

🍓 This One-Bowl Strawberry Almond Cake is my go-to when I want something fancy but only have the energy for one dirty dish. The almond flour makes it incredibly moist and gives it a sophisticated flavor that pairs perfectly with tart spring berries.

What You'll Need
• 1.5 cups almond flour
• 3 eggs
• 1/2 cup honey (or maple syrup)
• 1 tsp vanilla
• 1/2 tsp baking soda
• 1 cup sliced strawberries
• 1 cup chopped or whole almonds

Steps
1. Whisk eggs, honey, and vanilla.
2. Stir in almond flour and baking soda.
3. Fold in half the strawberries and all the almonds
4. Pour into a 9-inch greased pan, top with remaining berries.
5. Bake at 350°F ($175°C$) for 30-35 mins.

Farmers market asparagus + toasted almonds + Parmesan = simple but elevated. Bright, fresh, and weeknight easy. 🌿🍋✨

What You'll Need:
• 1 lb fresh asparagus, trimmed
• 2 tbsp olive oil
• Salt & pepper
• ¼ cup sliced almonds
• Zest and juice of ½ lemon
• ¼ cup grated Parmesan
• Red pepper flakes (optional)

Steps:
1. Preheat oven to 400°F.
2. Toss asparagus with olive oil, salt, and pepper.
3. Roast 12–15 minutes.
4. Toast almonds in a dry skillet until golden.
5. Top asparagus with lemon zest, juice, almonds, Parmesan, and red pepper flakes.
