PIMENTO CHEESE FRITTERS
Ingredients:
• 2 cups your pimento cheese (cold works best)
• 1 cup shredded sharp cheddar (optional for extra cheesiness)
• ½ cup all-purpose flour
• ½ cup cornmeal
• 1 egg
• 2 tablespoons mayonnaise
• ¼ teaspoon garlic powder
• ¼ teaspoon onion powder
• Pinch of black pepper
• Oil for frying (vegetable or canola)
🔥 Instructions:
1. Chill the cheese
• If your pimento cheese is soft, refrigerate 1–2 hours so it firms up.
2. Mix batter
• In a bowl combine pimento cheese, shredded cheddar, egg, mayo, garlic powder, onion powder, and pepper.
• Stir in flour and cornmeal until thick enough to scoop.
3. Heat oil
• Heat oil to 350°F in a skillet (about 1–2 inches deep).
4. Fry
• Drop spoonfuls into hot oil.
• Flatten slightly.
• Fry 2–3 minutes per side until golden brown.
5. Drain
• Remove to paper towels.
• Sprinkle lightly with salt while hot.
