Gardens are for more than vegetables.

GardenSmith Acres cultivates gourmet mushrooms, not wild foraged. Grown on hardwood sawdust blocks and straw bales at Gardensmith Acres. Totally organic, no chemicals used.

Storage
Fresh mushrooms will keep for one to two weeks at 38 to 42 degrees.

Flavor
All of the strains Gardensmith Acres grows are mild in flavor like the button mushroom from the grocery store.

Cooking
Stir fry at high temps until brown [about 5 minutes] and then add to dish. You can also do a low temp saute with aromatics [onions, garlic, celery] and stir in pasta or rice. There are lots of recipes and uses for these mushrooms.

Crude Protein by dry weight: 10 to 30%
Vitamin C: 30 to 144 mg per 100 g
Niacin: 109 mg per 100g
folic acid: 65 mg per 100 g
High in Potassium: 306 mg per 100 g
thiamine [B1] .16 mg per 100 g
Provides calcium, copper, iron, selenium and riboflavin
Also contain dietary fiber, carbohydrates and sugars

Medicinal Properties:
Oyster mushrooms naturally produce Lovastatin, a drug approved by the FDA for treating excessive blood cholesterol. Tumors were reduced in mice after ingesting Oyster mushrooms in 20% of their diet. Colon cancer was reduced in mice from eating corn cobs colonized by Oyster mushrooms. Studies have found that eating Oyster mushrooms decrease obesity and regulate blood sugar.
