Hello beautiful people!! My family and I have been home from our time away for a whopping 24 hours and I'm already dreaming about our next cooking workshop!! (If i haven't gotten back to your comment or email, please forgive me!!! I haven't had signal for much of the last couple of weeks and have spent the much needed time away with my little family... But i am back and working on catching up!!!)

On Sept 9th, in just under 2 weeks, we will be hosting our special edition Gluten Free Empanada folding workshop!!!

This is the only time this year we will be hosting this one!!!!!

We will be going over the folding technique specific to gluten free empanadas - and we will be using two different gluten free doughs, as well as how to cook them!

This workshop will be much like our others in that it will include a 3 course meal (gluten free, of course!!!) as well as lots of take home goodies....and we can absolutely make anything dairy free also for anyone who needs that. (Just mention it during sign up)

The date will be upon us before we know it!!! If you want to learn the secrets to making a good gluten free empanada.... Join us!!!! This will be one for the books and I'm confident you'll be happy to add this to your gluten free cooking repertoire at home!!!!

Hey everyone!!! So my family and I spent the last week adventuring through the blue ridge mountains and as our time away together comes to a close, it is time to keep searching for the right person to join our café crew ❤️

I posted this a few weeks ago and now I'm posting again! (Additionally, I also have a part time associate position available- the hours are Saturdays 11am-5pm and Mondays 11am-7pm. I'll be posting details on this soon but if you're interested, dm me in the meantime!)

We are hiring a Café Operations Lead. This position is dynamic and is essentially in charge of "back of house" operations while also working "front of house." This position is in charge of managing production for the kitchen prep for the deli case and managing inventory in the pos system. In addition, this position needs to be fully trained in front of house service, using the espresso machine to make drinks and works closing shifts independently.

This is a year-round steady position with full time hours. This role is integral to operations at our café. The hours and days are fixed (tues-fri 11am-7pm and Saturdays 9am-5pm.)

Having experience in a commercial kitchen handling food is necessary, as is having a positive attitude, experience providing excellent customer service, and proficiency speaking English. It is so important to genuinely love people to be successful at the café! (Luckily our customers are truly amazing across the board which makes loving people easy! 🫶)

This role is perfect for someone who enjoys talking and connecting with people, pouring love into food, staying organized, thrives in a fast paced environment, can work independently and as part of a team, and is a proficient multi-tasker.

Good morning!!! We open at 11am at the café this week!!!

Megan will be there to take care of you - whether you come to sit and enjoy a hot empanada, grab a cold box of empanadas to heat at home, some fresh pasta or ravioli to cook at home ..... or a coffee!!! ☕

I haven't talked about it in ages BUT we do make all of our empanadas from scratch at our factory! Racks upon racks every single week 😍 There are three teams that make up The Empanada Girl - you've got the factory crew that makes all of the Empanada dough and empanadas. They do all of the behind the scenes prep for the business - they load the truck for the markets, they make anything empanada related and anything big batch - like chimichurri sauce and marinara sauce. They work at the factory where we have all of our industrial production machines and get stuff done. It's what I would consider the "heavy lifting" - making thousands of empanadas per week is hard work. 💪

Then we've got our Farmer's Market crew!! They are the faces you see at our weekend markets. They meet at the factory in the morning, finish loading up for service, drive the truck to the markets, set up, serve all of you lovely people that buy empanadas and keep us in business 😅 and then bring the truck back to the factory, unload, and do it again the next weekend! They also help me keep the gas tanks full because we unfortunately go through SO much gas using the generators for the market and they help me do inner maintenance in the truck when something breaks. 🫶

Lastly, we've got the café crew!!! Those are the faces that serve you at the café. They keep everything running smoothly at our brick and mortar location - they heat and/or pack your empanadas, they make your coffee, they cook all of the prepared foods + the lasagnas/frozen prepared foods we sell out of there, they maintain the place clean and organized, and more recently - they help me prepare everything for the workshops!!!!

As you can see, there is so much more than just me working to make things happen. And I truly couldn't do it all without every single one of them. ❤️❤️❤️ When you support The Empanada Girl - not only are you supporting my family, but you are supporting many other local families. ❤️❤️❤️

Hello everyone!!!! Just wanted to give a quick update - The café is going to be open with special hours for the last two weeks of August. Please excuse the basic black and white poster - I am trying so hard to tie up all my loose ends before clocking out on my first real family vacation in years!!! Meanwhile, Megan will be holding down the fort at the café!!! If you are looking to sign up for a workshop - give her a call (941-870-2729). I'll be posting the dates soon but somehow tickets are already being reserved before I manage to post them!! Also markets are scheduled as normal!!! The emp girl crew will be holding things down while I take some much needed quality time with my little family.

I tried to take videos when I prep for workshops and during the workshops but I tend to really lock in and forget to film what I'm doing 😂 I did manage to get like two videos yesterday and this is one of them 😅

In this Workshop, everybody got a little package of pre-cut dough to layer in their lasagna. Every person got to assemble one small and one large lasagna, so each package had exactly 5 1/3 lasagna sheets for the small lasagna and 2 halves + 3 3/4 sheets for their large lasagna. This is the video of me cutting and portioning everyone's packs.

This workshop was the 4th we held in 3 weeks and it feels like my crew and I just finished a marathon!! 😅 Each workshop takes quite a bit of behind the scenes planning, purchasing, and prepping to put on so it feels like an accomplishment to do so many in such a short period of time!!

That being said - it's my last workshop until I go out of town with my family on vacation!! My partner booked us a cabin in the Blue Ridge Mountains in NC and we'll be driving up with all the kids (pray for me, it's our first road trip 😂).

Everything will still continue and run as normal - the truck will be at the markets and the café will be open the normal hours!!!! To be really real, the margins are so paper thin right now that the business can't afford to be closed due to leisure, especially since we are braced for weather closures. This means we take turns taking time off so the whole machine can continue to work as normal and now it's almost my turn!!!! 🤗

Last night we had an amazing first ever Lasagna and Manicotti workshop!!!! It was quite different than the other workshops we've done so far but so so fun! I love that we had some people that had made lasagnas before - but still had fun and learned something new... But I don't believe anyone had made manicotti before!! The goodie bags for this class are insane, too 😅

In this workshop - we put out different sauces and fixins and everyone builds their own lasagnas to take home and then everyone gets to learn and practice their manicotti roll also! And for dinner we had.... You guessed it.... Lasagna and Manicotti 🤤 that I made earlier in the day because those trays baked while we workshopped!!!

Last night, my frequent fliers in the back there requested that I do a spinach pasqualina (pie) workshop.... And I'm going to have to oblige. We're going to have to do a savory pie workshop 🤤🤤🤤 I'm thinking we could make some of the argentine classics - pascualina (spinach pie), tarta de choclo (sweet corn tart 🤤), tarta de jamon y queso (ham and cheese tart), maybe even the italian artichoke pie?!?! I'll definitely plan it once I come back from my vacation and announce a date (probably for November).

We're stocked up on breakfast empanadas to make your back-to-school week a little easier!! Did you know you can buy empanadas refrigerated to heat at home?!? They make for an excellent easy/on the go breakfast 🥰🥰🥰

For years, the way I found out it was back to school week was because of the moms that would come by the market and grab a box of breakfast empanadas because they were the requested back-to-school breakfast 🥲😭❤️🫶
