The very first thing I saw when making all of the desserts of my wedding was a full tray of burnt cookies.

Luckily, it was just the top rack. *silly me!*

Recipe for my new favorite party cookie that loves you back:

Macadamia Nut, Coconut & Dark Chocolate Chip Cookies

Ingredients
1 bag Beanie Bites Chocolate Chip Cookie Mix
1/2 cup sweetened shredded coconut
1/2 cup chopped macadamia nuts
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/4 cup coconut cream

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Set aside a small amount of the shredded coconut and chopped macadamia nuts for topping the cookies.
- Add the Beanie Bites Chocolate Chip Cookie Mix, remaining coconut, remaining macadamia nuts, melted coconut oil, maple syrup, and coconut cream to a large bowl.
- Mix until fully combined and there are no cracks in the dough. If the dough seems too dry, add water one tablespoon at a time until it holds together.
- Scoop out one heaping tablespoon of dough for each cookie. Roll the dough into a ball, then gently flatten it into a cookie shape. Use lightly wet or oiled hands to prevent sticking.
- Top each cookie with the reserved coconut and chopped macadamia nuts.
- Bake for 8–10 minutes, or until the bottoms are golden brown.
- Allow the cookies to cool before enjoying.

Storage
Store the cookies in an airtight container on the counter for up to three days. Freeze the rest so they’re ready whenever you need a party in your mouth…. but still want to support your body with protein, fiber, and plenty of nutrients!

We’ve been a little quiet lately because life has been wonderfully busy! We bought a house, discovered it needed more work than expected, hosted our welcome party at said house, got hitched, and started planning a two-month honeymoon (more on that later!) 🏡💍✈️

For our wedding celebrations, I made all the desserts with Beanie Bites! I wanted to feel good about what we served our guests while showing them that food made with “alt” ingredients can still taste genuinely amazing and worthy of something as grand as a wedding.

I’ve said it before and I’ll said it again: You do not need to eat junk food just because it’s an occasion. Beanie Bites makes it easy to have a decadent treat and still support your health.

That’s kind of inspired the new Beanie Bites Party Series: starting with the four recipes that we served at our wedding. First up are these rich, fudgy brownie bites: sweet enough to please any palate and so good that even my fast-food-loving cousin kept coming back for more.

So everyone who came to our wedding left with a happy gut!

Intentional ingredients. Party-worthy results.

Recipe:
- 1 bag Beanie Bites Chocolate mix
- 1.5 cups unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1/4 cup coconut cream
- 1/2 cup dark chocolate chunks

Combine all ingredients in a bowl. Using a tablespoon, scoop the batter into your tray. Use 1 tablespoon for smaller bites or up to 2 tablespoons for larger bites. Top with dark chocolate chunks.

For traditional brownies, spread the batter evenly in a brownie pan and top with dark chocolate chunks.

Bake at 350°F:
* Brownie bites: 15 minutes
* Brownies: 25–30 minutes, or until a knife inserted in the center comes out clean

Allow them to cool, then enjoy! Store in a sealed container on the counter or freeze for later.

Here’s my actually healthy dot cake made with the Beanie Bites mix, mini Just Date chocolate chips, Karalynne Call strawberries & cream protein, and COCOYO Coconut Yogurt!

Ever checked how much sugar is in just 1 or 2 tablespoons of your favorite creamer? Also who ever uses just 1 tablespoon?

I love that this creamer is so easy to make, it’s perfectly sweetened and low on the glycemic index, not to mention eating a date is like eating a multivitamin!

Don’t like coffee? Add some cacao for a legitimately healthy and incredible chocolate milk!

Yay to simple hacks for better health! You can also do this with maple syrup, honey or agave!

Did I mention that this pairs incredibly well with Beanie Bites?
