Christmas Jam Thumbprint Cookies
•1/2 cup unsalted butter (room temperature)
•1/2 cup sugar
•1 large egg yolk
•1/2 tsp vanilla extract
•1 1/4 cups flour
•1/8 tsp salt
Preheat oven to 350. Line baking sheets with parchment paper.
In bowl cream together butter and sugar until it is well mixed.
Add egg yolk, then vanilla beating with each addition and scrapping the sides of the bowl as needed.
Add the flour and salt and stir on low to combine, increase to medium until dough forms.
Divide dough into 25 balls, rollling each into a smooth ball.
Place cookie dough balls on parchment-lined sheets and press the center with your thumb or rounded back end of wooden spoon.
Fill the thumbprints before baking with 1/4 tsp of Christmas Jam and bake for about 10 minutes. Transfer to rack to cool.
