Coffee Stout Molten Cake: Unusual grains, legendary taste. That’s what you get when you drink local, Seattle-based Ghostfish Brewing Company. Known for their dedication to gluten-free brewing, they’re a natural partner for us—not only for our newest seasonal molten cake flavor, but also as we welcome two of their beers onto our full-time menu. It’s another step in our commitment to keeping our offerings diverse, inclusive, and full of great options for everyone, no matter their dietary restrictions.
Over the years, Ghostfish has earned numerous awards for their gluten-free beers, continually pushing the boundaries of what gluten-free brewing can be. Like us, they’re also committed to environmental stewardship, prioritizing sustainable practices throughout their business. Our molten cake special this season is a tribute to this partnership, featuring Ghostfish’s award-winning Watchstander Stout. We’ve transformed it into a rich stout caramel sauce, layered with notes of Victrola coffee and chocolate that perfectly complement the dessert. This latest creation comes from our longest-tenured BOH team member and Sauce Lead, Sean, (since 2015 - que latest video trend: what were you like in the 90’s? We’re pretty sure it would still show videos of sauce making in the HC kitchen) who once again worked their magic of the dark arts to craft a caramel sauce we’d happily drizzle on just about anything.
Together, it’s a collaboration rooted in creativity, shared values, and a passion for making sure everyone can enjoy something truly delicious starting at the beginning of the brewing process, and ending in our copper sauce pot where caramel bubbles away to create a pairing worthy of our newest ooey-gooey molten cake 🍺☕
