Five years. Same stone molino. Same hands.
Every morning we cook whole corn in cal — nixtamalización, the process Mesoamerica figured out thousands of years ago. The lime unlocks niacin your body can actually absorb, pulls in calcium, completes the protein, builds flavor you can’t fake. Then we grind the whole nixtamal on stone — germ, bran, all of it. That’s masa. That’s a whole-grain food.
Most “corn tortillas” on a shelf? The germ and bran get stripped out, because the germ holds the oil and oil goes rancid. Pull it and you get flour that survives months in a warehouse, kinda what happens in the wheat flour industry ( tip: watch for one word on the bag: “enriched.” Sounds like a bonus. It’s a confession) — but you just threw away the fat, fiber, vitamins, and flavor. What’s left is basically starch. Then they add cellulose gum, guar gum, propionic acid, amylase to make that starch act like a real tortilla. A real one with nothing in it at room temp goes stale in 12 hours. Months on a shelf only happens with chemistry. So when people say Mexican food “bloats” them — reconsider what you were eating. Free chips, fried in refined seed oil, salted to the moon, made from stripped-down starch (only way to give those free). That sits heavy. Real masa is whole corn, fiber, gluten-free, built over millennia to feed people well.
Ours takes more of a bite to crunch. Good. That’s something actually being there. No gums faking softness, no acid faking freshness. Just maíz, cal, fuego, y el molino.
