In Civita Bagnoregio the villlage which inspired Hayo Miyazaki’s castel in the sky.

A landscape shaped by eruptions of the nearby volcano Volciji which now sleeps under Europe’s latest Volcanic Caldera/depression lake. (Whose last eruption was actually in Roman times, about 2,000 years ago).

Calsnca - pleocene chalky clay bluffs topped by tufo (compressed ash) create extreme hilltops where people have lived since the time of the Etruscans.

This place is a dramatic expression of the geological history of southern Umbria and the Orvieto DOC zone which has clay, sandy clay, and volcanic terroirs.

Vineyard lesson in biodynamic vineyards of Champagne Augustin in the Village of Avery-Val d’Or.

Watch the video to learn about this unique little valley nestled between the Vallee de la Marne and the Montagne de Riems, whose fruit the big houses all jockey for!

This Grower Producer keeps their fruit and does absolutely magical stuff with it!

They use the old style press (they say it is more work but more evenly pressed the grapes), horses in the vines, amphorae for aging of the base wines, and are working symbiotically with the vines in a myriad of beautiful and surprising ways!

I learned so much today!

We spent time in the vineyards, in their unique winery, then enjoyed the most amazing meal in their new restaurant (open to the public in July)!

Drinking the wines instead of tasting and spitting completed this experience in a very moving and satisfying way!

Merci to Marc and Emanuelle, their son Maxence (who each bring their unique passion and talents to the wines) and of course their brilliant chef (a Laotian/french Canadian who married a champenois woman) who has mastered the juxtaposition of the elements at table…umami and freshness! - enhanced the experience of this vibrational wines!!
