SPINACH ARTICHOKE PROTEIN DIP 🥬🧄🧀💪

Creamy, cheesy, packed with protein, and made with cottage cheese. This spinach artichoke dip tastes like the classic appetizer but with a nutritious twist.

Ingredients:
1 container (16 oz) cottage cheese
1/4 cup grated parmesan cheese
1 garlic clove
Juice of 1/2 lemon
1 tbsp olive oil
1/2 tsp salt
Fresh cracked black pepper
1 cup chopped spinach
1 can (14 oz) artichoke hearts, drained and roughly chopped

Optional Toppings:
Extra parmesan cheese
Red pepper flakes
Fresh parsley
Everything bagel seasoning

Serve With:
Toasted sourdough
Seed crackers
Cucumber slices
Bell peppers
Carrots
Snap peas

Ingredients:�1 large eggplant, thinly sliced�3 servings shredded mozzarella cheese�2 tbsp pesto�2 oz fresh mozzarella, thinly sliced�1 tomato, thinly sliced�Handful of arugula�Fresh basil leaves�Fresh cracked black pepper�Balsamic glaze

ITALIAN FRIED EGGS 🇮🇹🍳

Ingredients:
1/2 cup tomato sauce�1/4 cup water�2 tbsp olive oil�4–5 fresh basil leaves�Parmesan, Pecorino, or Grana Padano cheese (enough to fully cover your pan)�2–4 eggs�Salt & pepper, to taste�Extra fresh basil for serving�Toasted bread, for serving

Instructions:
Add the tomato sauce, water, olive oil, and basil to a blender and blend until smooth.
Lightly coat a nonstick pan with a thin layer of olive oil.
Grate a generous layer of Parmesan, Pecorino, or Grana Padano into the pan so the bottom is completely covered.
Crack the eggs directly over the cheese.
Turn the heat to medium-high and cook for 2–3 minutes, until the cheese becomes deeply golden and crispy.
Pour the blended tomato sauce around the eggs.
Cover with a lid and cook for another 2–3 minutes, or until the eggs reach your desired doneness.
Season with salt, pepper, and extra fresh basil.
Serve immediately with toasted bread for dipping. 🍞🍳
