🍲 Cozy Rotisserie Chicken Mushroom Soup

🛒 Ingredients
2 tbsp olive oil or butter
1 onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
8 oz mushrooms, sliced
6 cups chicken broth
2 cups shredded rotisserie chicken
1 cup milk or half-and-half (for creaminess)
2 tbsp flour (to thicken)
1 tsp dried thyme
Salt & pepper, to taste
Fresh parsley, for garnish

In a large pot, heat oil/butter. Sauté onion, garlic, carrots, celery, and mushrooms until softened.
Sprinkle in flour, stir, and cook 1 minute.
Slowly whisk in chicken broth, then add thyme, salt, and pepper.
Simmer 15–20 minutes until veggies are tender.
Stir in rotisserie chicken and milk. Heat gently until warmed through (do not boil).
