TODAY’S LUNCH 🍅🫘🍚

One pouch jasmine rice.
A handful of frozen black eyed peas.
A handful of frozen haricots verts.
A handful of seasoned wild mushrooms.
One can diced tomatoes — drained.

Then I threw on:
• Trader Joe’s crispy garlic
• sunflower seeds
• Trader Joe’s umami seasoning

That’s it.

Cheap.
Fast.
Warm.
Filling.
Mostly shelf/freezer food.

Honestly tasted like something from a little café that would charge you $18 and call it a “rustic grain bowl.”

Shopping with me at Trader Joe’s. EPISODE 1

AlVegan @ Trader Joe'ses that I was looking at were 3% sodium or less. This is a very doable whole food plant friendly amount of sodium.

Bring both flavors while keeping the cooking process simple with seasoning blends like this. Trader Joe’s is awesome for unique and interesting seasoning blends

This was SO DARN GOOD!!!

Made it in the motorhome.

1. CUT UP-
handful of grape tomatoes,
one avocado,
three small Persian cucumbers
Red onion

2. i ADDED: 1 cup of rinsed frozen Black Eyed Peas. (Yes you can sub black beans or garbanzos, whatever. You do you)

1 pouch of heated and cooled brown rice and quinoa (jasmine, white rice, cilantro lime, or pasta, whatever— you do you)

1 DRAIN 1 jar of marinated artichokes (hearts of palm, marinated mushrooms maybe? whatever, you do you)

3. SPRINKLE green goddess seasoning,

4. Top with sunflower or pumpkin seeds

5. YUM!

It’s so darn good!

CREAMY ROASTED TOMATO CHICKPEA PASTA 🍝🌿

This is one of those dinners that tastes way more expensive than it actually is.

Creamy roasted tomatoes.
Garlic.
Chickpeas.
Spinach.
A warm silky sauce wrapped around curly pasta.

Comfort food without the food coma.

In English the word Puttanesca means “lady of the evening” to put it lightly. It’s a slang term and you can use your own imagination here.
Regardless, the flavours are spicy, zesty and full of life. The original is commonly served with a squeeze of lemon and seafood.

The plant friendly version simply removes the anchovies.

Serve it with whatever or however you like.
