How much of what our grandparents knew will still be understood by our grandchildren?
I think about that when I look at our family’s peppercorns.
My grandfather paid attention to the weather and the harvest. My father taught me to understand why a practice exists before trying to change it. As the third generation, I want to carry those lessons forward and make them useful beyond our fields.
That is why I started the Yupanqui Pepper Academy.
You don’t have to be a grower to be curious about your food. Sometimes it begins with an ingredient in your hand and a question: how did this become what it is?
In Issue 015, I explain how the Yupanqui Pepper Academy brings three generations of peppercorn growing experience into useful conversations for cooks. A family observation gives us a starting point. Research helps us examine possible explanations. Keeping those two things clear helps us share what we know without pretending every question is settled.
