Chicken Picatta Meatballs
Delicious dinner option that everyone will love!
What I Use:
2 lbs Ground Chicken
1/2 Sweet Onion, finely diced (forgot to mention this in reel)
Handful Fresh Parsley, finely chopped
4 Garlic Cloves, finely chopped
2 tbsp Capers, finely chopped
1 Egg
1 cup Bread Crumbs, divided
1 tsp Kosher Salt
1 tsp Ground Black Pepper
1/2 Lemon, zested & juiced
Drizzle of Olive Oil

What I Do:
In a large mixing bowl, mix all the above using half of the bread crumbs. Create meatballs. Set aside. In a shallow bowl place the rest of the bread crumbs, and roll each meatball lightly, shaking off excess. In a large skillet over medium heat, drizzle olive oil. Once oil begins to shimmer, add meatballs. Cook 3 minutes per side. You’re looking to create a nice browning crust. Set aside.
Picatta Sauce:
2 tbsp Olive Oil
2 tbsp Salted Butter
1 cup White Wine
1/2 Lemon, juiced
3 tbsp Capers
Lower skillet to low. Using the same skillet— add olive oil and butter. Scrape bottom of skillet to release all those browning bits (extra flavor). Slowly add in white wine, lemon juice and capers. Stir and add meatballs back to skillet. Keep heat on low simmer, cover and cook meatballs for 20 minutes, flipping them over once.
I served meatballs with sweet peas, but I have served them over mash before. Be sure to pour some of that yummy sauce overtop.
