After a few unexpected days down, the smokers are rolling again and we are READY to feed y’all.

Seriously, thank you for all the patience, messages, and support while we got everything handled. We appreciate it more than you know.

And since we had a little extra time on our hands… we finally got another batch of our Peppered Pineapple Rib Rub made. 🍍🔥

Heaven forbid a guy hits Truman Lake to catch some crappie for the first time in years… apparently I’m not allowed to enjoy that. 😂

Literally in the middle of catching fish today, I got the phone call every business owner loves to get:

Our fire suppression system had been discharged at the food truck.

There was NO fire. Nobody was hurt. Nothing was burning. Just one of those unfortunate situations where the fire suppression system got a chance to prove that, yes, it definitely works. 😂

Unfortunately, when one of those systems goes off, it isn’t exactly a “wipe everything down and get back to work” situation. We’ve got a pretty substantial cleanup ahead of us, along with getting the system serviced, recharged, inspected, and everything back where it needs to be before we can reopen.

So for now, things are TBD, but it’s looking very likely that Mallard’s Smokin’ Bar-B-Que will be CLOSED for the remainder of this week.

I’ll keep everybody updated as I know more and let you know as soon as we have a firm reopening date.

We appreciate everyone’s patience and understanding.

And apparently next time I finally get a chance to go fishing, I may need to leave the phone on shore. 🎣😂

🤫 Is this Sedalia’s best kept secret?

I’m starting to think our wings might be.

For some reason, they’re one of those things people seem to overlook on our menu…

Until they actually try them.

Then we start hearing things like:

🔥 “Those wings are LEGIT.” 🔥 “I didn’t know you guys had wings like this.” 🔥 “These might be the best wings in town.”

And I’m not going to argue with any of that. 😂

They get the same attention we put into everything else at Mallard’s — done right, packed with flavor, and absolutely not an afterthought just because we’re a BBQ joint.

So I need the people who already know to help me out here…

📣 Mallard’s Catering Co. is looking for a part-time Catering Lead/Assistant!

Business is growing, and I’m looking for the right person I can count on during our busier months — typically 1–2 catering events per month, primarily on Fridays and Saturdays.

Most events would involve working alongside me with setup, service and breakdown. However, I’m specifically looking for someone I can eventually trust to take the lead and run an event without me when needed.

What I’m looking for:
• Reliable, punctual and responsible — this is the big one
• Professional, presentable and great with people
• Comfortable taking charge and representing Mallard’s Catering Co.
• Mainly Friday/Saturday availability
• Able and comfortable pulling/backing an enclosed trailer when necessary
• Someone who can follow a plan, solve problems and keep things moving without needing constant direction

This is not a set weekly schedule. Catering dates can be sporadic, but events are generally booked weeks to several months in advance, so you’ll normally have plenty of notice.

Most events won’t require pulling the trailer, but I occasionally have dates when I’m unavailable or out of town, and I need someone I can trust to handle the job from start to finish.

I’m not looking for just another set of hands. I’m looking for someone dependable who wants a flexible side gig, enjoys working with people, and can become someone I trust to represent Mallard’s when I can’t personally be there.

Congratulations, Hannah & Kevin! 🥂🤍

This one was a little extra special for us. Hannah is a fellow wedding vendor with her mobile bar, so we’ve had the opportunity to work alongside her at other events — this time, we got to be one of the vendors for her wedding!

And they definitely kept us busy. 😂

🔥 Rehearsal Dinner — Mallard’s BBQ
🇮🇹 Wedding Reception — our very FIRST Italian catering!

One of our favorite parts of the night was hearing how many guests saw Mallard’s setting up and immediately thought, “Oh, we’re having BBQ!” — only to find out we had an entirely different menu waiting for them.

Homemade lasagna, chicken Alfredo, salads, roasted carrots, garlic bread… and judging by the empty pans and the rave reviews we heard all evening, we’d say our first trip into the Italian lane was a success. Some are even calling me the Italian Stallion Cowboy 🤣

BBQ will always be where Mallard’s started, but Mallard’s Catering Co. was created to be so much more than BBQ. Italian, Cajun, homestyle, taco bars, appetizers and more — all with the same scratch-made approach and attention to detail we’ve built our name on.

Thank you, Hannah & Kevin, for trusting us with not one, but TWO meals during such an important weekend. Congratulations to you both! ❤️
