Hey all! Be sure to check out coffee if you're in the Russelton area tomorrow, May 9th. They're an amazing coffee truck that's just starting up. They have awesome drinks, and some pretty sweet biscotti provided by yours truly. They even have a super secret new flavor that I haven't released yet! Can you guess what it is? Just wanted to say thank you to for having me at VegFair this year. I had a lot of fun showcasing my vegan options, and even experimenting and turning my vegetarian options fully vegan. It gave me a lot of fun ideas on how to accommodate my vegan customers even better than before. To all who stopped by our booth and tried our food, thank you! You're the reason why I did this event because I wanted to showcase some of my vegan options. I hope to cook more for you in the future either through meal prep, catering, or even another vegan festival in the future (foreshadowing? 👀). Thank you all for stopping by and trying our meals, and our vegan treats. We hope to see you again!

In preparation for next Saturday I thought I'd share one of my secret ingredients for making vegan pastries: Aquafaba. Due to the nature of my menu I have a boat load of chickpeas to cook week to week. Once they're done doing their thing I'm left with this big ol pot of brown water. But its not just brown water. It's liquid gold. Due to high levels of proteins, starches, and saponins leftover in the water this viscous liquid has all the components necessary to mimic the properties of an egg white in baking. It can even be used to make vegan mayonnaise for the same reasons! The only addition needed when using this is about a teaspoon of oil per egg, which mimics the fats found in the yolk. So excited to share them with you!

***NEW MENU ITEM***

We've wanted to add a soup to this menu for a while, so we thought we'd start strong. Introducing our Spiced Lentil Soup! Creamy lentils cooked low and slow in veg stock and seasoned with Mediterranean spices and topped with crispy, homemade croutons. An excellent option if you're looking for a light lunch, or a hearty vegan option for dinner. You can order this luscious option in either cup, pint, or quart options. They will be available for order this week, so get yours soon! This is another addition that we'll be offering at since, again, IT IS ENTIRELY VEGAN!

***NEW MENU ITEM ALERT***

They might be called "Winter Squash", but I feel that they can be eaten anytime of year. Our Winter Squash Tagine is packed full of nutritious, and delicious, winter squash. Including: Pumpkin, Acorn Squash, Butternut Squash, and Spaghetti Squash. We then season it with our house made Ras El Hanout and Za'atar spice mixes, and sweeten it with the addition of dried dates and apricots to add a little extra body to this dish. Served on top of our beautiful Turmeric Rice this is a meal that you'll love to add to your weekly rotation. And fun fact...its VEGAN! This will be one of the meals that we'll be selling at in April, so let us know how it is!

Incredibly excited to announce that we will be showcasing our Vegan offerings at Pittsburgh Veg Fair in April! We are so excited to be a part of such an amazing event. One of the greatest things about being a Mediterranean inspired company is the wide array of vegan options available. No matter what country you go to you can almost always find an incredible meal that has no animal biproduct at all. We're super excited to show the Vegan community of Pittsburgh what we have to offer! See you there!

Just wanted to share some photos from an event we catered a few weeks ago! I had the honor of catering a lovely brunch themed birthday party for a 1 year old's birthday party. I truly enjoyed this because, fun fact about me, I love breakfast food!! We made: Overnight oats (vegan), Spiced Turkey Breakfast Sausage, Butternut Squash and Kale Frittatas, Buttermilk Pancakes (with a vegan alternative), Bacon, and a big helping of buttermilk waffles. The event went off without a hitch, and everyone really enjoyed the food so I'd say it was a total success!
