Honey, honeyโ€”itโ€™s that time again!๐Ÿฏ

All spring, honey bees have been hard at work foraging for nectar, pollen, and making honey.

Now that the summer months are here, beekeepers will begin to determine when to harvest their honey. A key factor in deciding is to look at the honeyflow!

The honeyflow is a period of time in which floral nectar sources are available. It varies according to region, weather, and availability of nectar sources.

Typically, beekeepers wait until the end of the honeyflow to maximize their harvest. However, some beekeepers harvest in early summer and again in the fall!

Wanna know a secret?๐Ÿคซ Some people believe that honey has an expiration date.๐Ÿ˜ฌ

But the truth is, pure honey will never go bad! Like, never ever.

Over time, pure honey will become cloudy, thick, and solid. This is a natural process called crystallization, or granulation, and is actually proof that the honey has not been treated to remain โ€œshelf stable.โ€

A common opinion is that transparent, flowing honey looks โ€œbetterโ€ on store shelves than granulated honey. And a common misconception is that granulated honey is honey gone bad.

Weโ€™ve heard numerous stories of people throwing away their granulated honey or local shops refusing to carry it!

Thereโ€™s a simple solution to de-crystallize honey: gently heat it in a pan of hot water until itโ€™s nice and runny again. Donโ€™t throw it away!
