Marinated pork roast has a unique smell when it starts falling off the bone. Your stomach growling is a good indication it might be time to check the temp 1 last time. Personally I let it cook in the juice until it falls apart.

What a great event thrown by the Esparza family. The action and entertainment was non-stop throughout the entire night. It was my families absolute privilege to play a small part in what is a well deserved 90th bday to my never aging and full of energy great aunt D. Thank you to all who helped!
