If you’re a fan of creamy not dried out Mac & cheese then this recipe is for you. Couple of things I changed: I omitted the salt and decreased the heavy cream from 2 cups to 3/4 cups! Wow what a difference! After cooking I broiled it for a few minutes with my Instant Pot Air Fryer. Hi Friends! It’s so easy to make fresh pumpkin purée in the Instant Pot! Skip the hard part of peeling and cleaning the pumpkin and just rinse and cut off the stem. Set on trivet add one cup water the the pot. Lock lid in place pressure cook 12 minutes NPR. When pin drops open pot and carefully remove pumpkin. When cooled scrape out seeds and remove peel. Blend the pulp in a blender. I use the puree to make pumpkin bread and pancakes PLUS oastmeal and risotto! Yum!

Hi Friends! How are you? What did you cook this week? I’m sorry I’ve been MIA but I’m still around and wanted to show you a gift I received recently for my birthday. Yep, it’s the Instant Pot Air Fryer and I love it!! I’m so happy with it for two reasons so far: 1. It reheated steak (originally cooked on the BBQ) perfectly 2. It fits neatly in a drawer with easy access. Do you have an Instant Pot Air Fryer lid? I’ve missed you and want to hear from you! Happy cooking!

For the past 3 years I have loved conducting the Introduction to the Instant Pot class in my home. Over 300 students have benefited from it by learning how to face fear and use a pressure cooker!! Due to conflicting reports and confusion about Covid 19 I’m sad to announce that I’m closing my kitchen. This means I’m no longer conducting classes in my home but will
continue to post recipes and other things on this cooking page. Please feel free to message me!

It all started when I received a gift certificate to a cooking store and I was introduced to the Instant Pot. After 2 months of it sitting in the box on my counter, I mustered up courage to figure out how to use this new appliance. Soon I was hooked and loved how easy it is to serve up delicious meals in record time giving me more time to spend with my family. I reinstated Sunday Dinner in my home and wanted to share this with others to disconnect from electronics, cook good food and enjoy relationships with others so we can all come to the table...….
