Coming home to a greenhouse full of veggies called for a good size pot of soup!
Let’s make a fresh - healthy meal with little effort !
Tomato Pepper Soup:
Cut your veggies in half’s and wedges - cover with olive oil, salt, pepper and I added Pampered Chef’s Basil Pesto Seasoning. Bake for 40 mins at 425 - then add to your blender 2 cups broth - I used veggie - your cooked veggies / squeeze your garlic bulb into the mixture and blend until smooth. My Pampered Chef Cooking Blender is quick and eliminates transferring the soup into a pot! Set it to soup and it blends and heats the soup to 212 degrees. Pour into bowls and enjoy with Crusty bread. You can add a little cream and fresh basil !! I was so hungry I forgot to get a picture of my finished product !! Made 6 servings.

My first attempt at limoncello .. this recipe used my sous vide .. saving us weeks of waiting. I started with Ever clear and 5 lemons … now to chill it and see how it is…
Making this for my Nieces 30th Birthday Party !! Fingers crossed !!

I love summer, with it comes the Farmers Markets! We have 4 really amazing markets in our area. One almost every day… this week we purchased 2 good size containers of amazing MicroGreens .. 1 package we juiced the other Rob and I used in our hummus veggie pita Sammie’s !! You don’t realize how much you miss microgreens until you have them again- each package was $19.
Where am I going with this ???
I have the technology to have never ending sprouts .. so these are my babies 24 hrs in the trays ! One side broccoli- one side spicy sprouts! Stay Tuned !!

Today we made some really quick and easy veggie burgers .. 100x better than frozen patties. This product allows you to be creative with seasoning and add-ins. They have several flavors and so far the Black Bean is my favorite.

You just add water mix and form it into patties and pan fry or grill ( on a cast iron or flat grill. Tonight Rob added 1 egg and lots of Mexican style shreaded cheese.

I made mine like a smash burger with tortillas, pickles and more cheese! So good !

Wow it’s been like forever !! Finally cooking again .. I took a hiatus and have been doing Factor meals ! I ve got to say, they are pretty good !!
Recently, Rob and I have been cooking vegetarian meals off instagram.. this is my version of one.
Easy layered veggie pasta !! Or no pasta and plate with your favorite veggie spiral! Recipe is in the comments under each pick!! Have fun with this one! So many ways to go- veggies, meat !!!
