Comments: In walk-in cooler, an open top pan of raw ground beef patties (Hamburgers) was found stored on shelf over raw pork chops and raw beef steak, both of which have a lower required final cook temperature than ground beef patties. CDI by owner moving the ground beef patties to the shelf beneath the pork chop and beef steak.

Comments: The blade and interior surface of the Electrolux Robot coup slicer was found still soiled with food residue from previous days use. Several deep metal food pans were also found still soiled with dried food residue after washed and put away as clean. CDI by Person-In-Charge (PIC) having employee to thoroughly clean and sanitize the slicer and the pans were placed at the dish washing machine to be rewashed.

Comments: Stewed chicken cooked yesterday and placed in reach-in cooler to cool down over night in deep pot was checked today and found still holding at 48 F. CDI by owner voluntarily disposing of the chicken to waste.

Comments: Several pans of mac & cheese prepared today were found left out to cool at room temperature. The PIC stated that they had been left out for about 20 minutes and he planned to soon place them in the walk-in cooler to finish cooling down. The temperature of the mac & cheese was 126 F when first checked at 9:14 AM. The PIC then moved the pans to the walk-in cooler. Later at 10:18 AM the pans of food were rechecked and were found holding at only 101 F which was (Per the cooling calculator) an unapproved cooling rate of 0.39 (It must be 0.54 or greater to be approved). The PIC then moved the pans of mac and cheese to the walk-in freezer. When checked again for the 3rd time at 11:21 AM, the temperature was down to 59 F. So the change in cooling mothed using the freezer adjusted the cooling rate to 0.67 F which was approved and allowed the food to be saved.

Comments: Foods holding in prep top coolers were found partly stored above fill line of containers in top section of coolers. Ribs were holding at 40 F in bottom of container, but were 45 F above fill line. Cooked mahi was holding at 40 F in bottom of container, but were 52 F above fill line. Precooked chicken was holding at 41 F in bottom of container, but was 45 above fill line. CDI by those portions of foods above fill lines being voluntarily disposed of to waste by Person-In-Charge (PIC). Also, in one of the salad prep top coolers (The one to right), foods holding there were as follows: Feta 48 F, potato salad 45 F, ranch dressing 42 F, diced tomatoes 45 F, (In bottom section of cooler) Feta 45 F, and diced tomatoes 45 F. The foods had been in that cooler longer than 4 hours, so CDI by PIC voluntarily disposing of those foods to waste. It was found that the air flow vent on the left side of the noted cooler was blocked by the second salad prep cooler to the left which was right up against and touching the problem cooler. The coolers were separated so that air flow could take place and the cooler is now properly cold holding at 41 F and below.

Comments: Observed several flies in kitchen. Have restaurant treated by licensed pest control agency to eliminate pests from the kitchen. Observed dead roaches in light shields over ware wash station. Collect dead insects from light shields and remove them from the restaurant. The door that leads into the kitchen from the covered front porch area is not able to fully shut which is allowing flies to enter the establishment. The self closure device is worn out and not working. Replace the self closure device on that door so that it fully self closes.

Comments: Walk in cooler was found holding food temps at 44-43F. Upon questioning it was found that the cooler was turned up slightly during the winter due to freezing and was never adjusted back down (cooler appeared to have been set to 40F). Additionally today a delivery was recently put into the cooler and the door was open during the time. CDI by having PIC adjust the cooler down slightly and air temps in the cooler were down to 37F by the end of the inspection and food temps were dropping. No food was discarded due to the relitily low temps and the likely hood of the issue being caused by the extended opening of the door by due to the deliver to have caused the issue.

Equipment shall be maintained in a state of repair and condition. 1 non National Sanitation Foundation (NSF) can opener was found onsite ( requires Phillips head screw driver to remove the blade). A new domestic cooler has been installed to replace the old damaged pepsi cooler. Remove all non NSF approved equipment.
