People puzzle, or criticize, weeds at Montpelier. But weeds have a purpose and if you are serious about regenerative farming then you must accept weeds. Attached is a conversation about that from one of the oldest and most venerated regenerative farmers in America. I was introduced to his farm products 35 years ago while living in California. Through Alice Waters restaurant. A worthy watch. A worthy task.

Scapes. The unblossommed flower end of hard-neck garlic. I first encountered this in my twenties while living in the Bay Area of California. Again at a NYC farmers market where it was then selling for fifty dollars a pound. Harvesting now at Montpelier. Note the singular one and its delicate curves. That’s peak. When you cut to sell. Not thick with a seed head. Although I do allow some to flower because the blossoms make the best garlic powder, I do not sell that degree of seeding as a scape. Somewhat larger to pickle. But when purchasing to make pesto or wet rub paste, this is what you want.
