The star of the dinner is River Cod, also known as Asian carp or SilverFin, an #invasive fish threatening North American rivers and waterways. With no natural predators, these invaders are out-competing native fish, striking fear as they approach aquatic ecosystems like the Great Lakes. Dining Services is partnering with the Illinois Department of Natural Resources and Louisiana Chef Phillipe Parola to get rid of this invasive species one bite at a time!

River Cod is similar in taste to mahi mahi. They are low in mercury because they don't eat other fish and are very high in health-enhancing omega-3 fatty acids. Also, they are plentiful and inexpensive. Get more info at www.cantbeatemeatem.us

Local Food Systems? I'm guessing a fish market on the east side of Springfield serving Illinois River Asian Carp isn't what you had in mind.
