Every time I get groceries (which is like once every 30-40 days) I wander through the meat isle and take a few notes.

Lamb options are virtually non-existent locally.
What you see below are the only options at Sam’s in Waterloo - leg of lamb, lamb chops, French rack.

There are so many more options when you have one processed yourself! I have two local processors for lamb that do a great job!

A standard 3-ounce cooked serving of lean lamb provides about 160 to 175 calories, 23 to 25 grams of high-quality protein, and roughly 6 to 8 grams of total fat. It contains zero carbohydrates and is rich in vital micronutrients like vitamin B12, zinc, selenium, and bioavailable heme iron.

American Lamb deserves a place in the protein industry.

Chicken processing has begun!

I did 14 of the Big Reds this week.
They are 12 weeks old and I did 13 roosters & 1 hen just to get a feel for where the hens are. The roosters averaged 6lbs - just where I like them!

Notable differences from the Cornish:
• I haven’t lost a single bird.
• Zero health issues.
• Thicker skin.
• A LOT more feathers. 😂
• Zero leg / feet issues

Overall I’m super happy with these and will raise them again.

Over the next two weeks I will finish the rest of the BR’s and start in on the Delawares.

I’m a one woman show and only do a handful at a time in between farm life, kids, & our other obligations.
