Since yesterday was eclipse day and I spent it with Graydon, I now have dough that has been bulk fermenting for 40+ hours. It smells soooo good. Tangy sourdough. I can’t wait to get it in the baskets to shape.

Today was Mustang Sally’s day to shine. I don’t use my starter when it peaks. I just use mine. That rise has more than doubled in 4 hours. Now let her sleep for the next 24 hours. Stay tuned.
