Throwing it back to July at the Blackstone Products griddle crew summit. This trip was special for a bunch of reasons, but to connect with a bunch of friends who are like minded, get to know/meet new friends, and spend 1 on 1 quality time with my wife for 4 days was something i couldn't be more grateful for.

If you’re reading this and you’re new here, I figured I should actually introduce myself.

I’m Shane.

I’m a husband, a dad, and just a guy who really loves cooking good food for people.

That’s honestly how all of this started.

There wasn’t some big business plan behind Meat Street. I wasn’t trying to build a “brand.” I just loved BBQ, loved being around the grill, and loved that feeling when you put something down in front of somebody and they take that first bite and look at you like… damn. 😂

So I started sharing it.

Then more of you started watching.

One recipe turned into another. One video turned into hundreds. I started meeting people I never would’ve met otherwise, working with some incredible companies, cooking at events, creating my own seasonings and slowly turning this thing in my head into something real.

And I’m proud of that.

But I also want you to know there’s a real person behind all of it.

I’ve got a family I love more than anything. I’ve got a regular life outside of social media. I’m figuring a lot of this s**t out as I go.

I screw recipes up.

I make things that are probably way too over the top.

Sometimes I nail it.

Sometimes I definitely don’t. 😂

But I have a hell of a lot of fun doing it.

And if you decide to follow me, that’s what I want this page to feel like.

Like you pulled up a chair in the backyard, grabbed a drink, and hung out while we cooked something ridiculous.

No pretending to be something I’m not.

Just good food, big flavor, some laughs, and hopefully a few ideas that make you want to fire up your own grill.

I don’t know exactly where Meat Street is going to take me yet.

But I know I’m having a damn good time building it.

Maui's Boat Snack Taco 🌮 🌊 🏝️

Inspired by the movie Moana, when i heard "boat snack" i think this is what he meant, or at least what i would've wanted. Sorry Hei-Hei 👀

Sweet chili crispy tenders, picked cabbage, pineapple slaw, on a fried blue corn tortilla. Can't forget the bugle beak.

Ingredients

Chicken

* 1½–2 lbs chicken tenders
* Spanglish Asadero Golden garlic seasoning
* Chicken breading
* Frank’s RedHot Sweet Chili Sauce
* Frying oil

Pineapple-Avocado Salsa

* 1½ cups diced pineapple
* ½ red onion, diced
* 1 avocado, diced
* Salt

Pickled Cabbage

* 2 cups shredded red cabbage
* ½ cup apple cider vinegar
* ½ cup water
* 1 tbsp sugar
* 1½ tsp salt

Tacos & Toppings

* 6–8 blue corn tortillas
* Tri-color tortilla strips
* Sliced radishes
* Black beans
* Bugles

Directions

1. Pickle the cabbage.
Mix vinegar, water, sugar and salt. Add the cabbage and let sit for at least 30 minutes. Drain before serving.

2. Griddle the salsa.
Cook the diced pineapple and red onion directly on the Blackstone until caramelized. Remove from the heat, cool slightly and mix with diced avocado and a pinch of salt.

3. Fry the chicken.
Place a pan of frying oil directly on the Blackstone and heat to 350°F. Season and bread the chicken tenders, then fry until golden brown and 165°F internally.

4. Sauce the chicken.
Immediately toss the hot fried tenders in sweet chili sauce until completely coated.

5. Fry the tortillas.
Add oil directly to the Blackstone and fry the blue corn tortillas on both sides until crispy but still flexible. Fold into taco shells while warm.

6. Build the tacos.
Fill each shell with pickled cabbage, pineapple-avocado salsa and a sweet chili chicken tender.

7. Make Hei Hei.
Add tortilla strips for his feathers, radish slices with black beans for his eyes, and stick a Bugle into the chicken for his beak.

8. Serve.
Pile them onto a platter with extra tortilla strips and pickled cabbage for that colorful, chaotic Hei Hei look. 🌊🐓
