As many of you already know, we're now offering poultry processing for others again! Well, we're now offering all whole birds the option to be spatchcocked and vacuum sealed!
What IS spatchcocking? It's a unique way to flatten the carcass by removing the spine, twisting the femurs and popping the sternum to allow the carcass to lay in a near frog-like position. This method offers many benefits including:
•less cook time (by removing the spine, you're allowing heat to distribute through the carcass much more evenly, efficiently, and quickly)
•more freezer space (whole carcasses without the spine removed take up a LOT more space and are clunky--and hurt VERY much if they accidentally drop on your toes!)
•MUCH more crispy, yummy skin (this method allows for more of the skin to be exposed so no more fighting your family for that perfect piece of crispy goodness!)
And did we mention that packaging spatchcocked chicken also allows you to store your frozen chicken longer as there is less potential for oxygen to get in that causes freezer burn? ;)
