Thanksgiving processing is a wrap! 10 birds, all heritage breed, done this year and boy, it was harder than it sounds! Tougher skin = hand-plucking for us and hand-plucking is for the birds! 🫠

Gentle Reminder/PSA:
Yes, we're on paternal/maternal leave at the moment (welcomed our 7th baby on September 27th). No, that does not mean we will make any accommodations to our long-standing availability (only Saturdays and Sundays) for holiday processing.

While we're very understanding of the desire to schedule processing in a way that fits best for your family's holiday time, this is our time to enjoy our newborn and for me (Sara) to rest my body so I'm able to properly care for and feed my child/other 6 children.

Why only Saturdays and Sundays? As mentioned before, we're a military family. We're blessed to not have any deployments scheduled any time soon but weekdays are simply not available. Especially now with the sun setting earlier and earlier in the day. Beyond that, we do not have outside employees. It's just Jason and I. We can only offer what availability we have when both of us are able to work together.

On a brighter note, though, if you'd like to schedule holiday processing for your birds, we have limited availability left open for the season. PM us if you'd like more information! Thank you for your understanding and continued support! God bless!

One of the most common questions I get from others just getting into home canning is how they can get their tomato sauce or paste thicker without having to cook it down for hours. In Virginia's summers, nobody in their right mind wants to wait for that! 🥵 So after much trial and error, I have found a solution! 🙌🏼

Take your cored (and optionally seeded--we use a spoon to scoop them out after halving them) tomatoes, add salt to them (adds flavor and draws out more water) and place them on a parchment paper-covered baking sheet and roast in the oven for 40 minutes at 400⁰. Once finished, you can optionally remove the skins once they've cooled or keep the skins on and blend in a food processor or with an immersion blender. Then either can as you would normally as paste (it will be THICK!) or add other ingredients to make chunky spaghetti sauce.

This highly reduces the time you need for processing and gives you that store-bought thickness we all likely seek (unless you like the thinner stuff 🤷🏻‍♀️).

As many of you already know, we're now offering poultry processing for others again! Well, we're now offering all whole birds the option to be spatchcocked and vacuum sealed!

What IS spatchcocking? It's a unique way to flatten the carcass by removing the spine, twisting the femurs and popping the sternum to allow the carcass to lay in a near frog-like position. This method offers many benefits including:
•less cook time (by removing the spine, you're allowing heat to distribute through the carcass much more evenly, efficiently, and quickly)
•more freezer space (whole carcasses without the spine removed take up a LOT more space and are clunky--and hurt VERY much if they accidentally drop on your toes!)
•MUCH more crispy, yummy skin (this method allows for more of the skin to be exposed so no more fighting your family for that perfect piece of crispy goodness!)

And did we mention that packaging spatchcocked chicken also allows you to store your frozen chicken longer as there is less potential for oxygen to get in that causes freezer burn? ;)

In the middle of processing the largest CHICKENS we've ever processed! We were hired to process 15wk old Cornish Cross (pregnant woman who couldn't handle their smell--don't judge) and these babies are LITERALLY the size of small turkeys! While they'll likely be a little tougher than what they're used to, the amount of schmaltz they will have is amazing!
