A little color. A little earthiness. A lovely place to begin.

If you’re curious about annatto oil, try it in my garden-fresh Puerto Rican sofrito. Add your prepared onion, peppers, garlic and herbs to a food processor. Drizzle in half the recipe’s oil, blend, then add more as needed until the mixture is chunky, like pesto. Scrape down the sides and blend until no large pieces remain.

The full recipe calls for ¼ cup of oil for the batch. Our aceite de achiote is ready to use, so there’s no need to infuse and strain seeds first.
