Chile Relleno Enchiladas with Creamy Green Chile Sauce 🌶️🧀

Craving cheesy enchiladas with smoky roasted green chiles and bubbling sauce? These chile relleno enchiladas are packed with melted cheese and bold Mexican-inspired flavors!

Ingredients

For the enchiladas:

12 white corn tortillas, lightly fried

6–8 large green chiles, roasted, peeled, and deseeded

2 cups shredded cheddar, Monterey Jack, or Oaxaca cheese

For the green chile sauce:

2 cups roasted green chiles

1 medium onion, chopped

2 garlic cloves, minced

1 tsp salt, or to taste

1 cup water or chicken broth

For topping:

1–2 cups shredded cheese

Optional: 1 fried egg per serving

Directions

Roast the green chiles over a flame or under a broiler until charred. Cover for 10–15 minutes, then peel and remove the seeds.

Blend 2 cups roasted chiles with onion, garlic, salt, and broth until smooth.

Lightly fry the tortillas until soft and pliable. Drain on paper towels.

Fill each tortilla with shredded cheese, roll tightly, and arrange seam-side down in a baking dish. Stuff the remaining whole chiles with cheese and nestle them between the enchiladas.

Pour the green chile sauce over everything and sprinkle with extra cheese.

Bake at 350°F (175°C) for about 30 minutes, until bubbly and golden.

Serve hot, optionally topped with fried eggs. Enjoy with Mexican rice, beans, or guacamole.

Kitchen Tip: For extra smoky flavor, roast the chiles until blistered but not completely burned through. Oaxaca cheese gives the filling a wonderfully stretchy texture!

Hearty Mexican-Inspired Beef Pozole Rojo 🌶️🍲❤️

Craving a warm, rich, and comforting bowl of traditional red pozole? This flavorful version uses tender shredded beef instead of pork, hominy, and a deep red chile broth for a delicious Mexican-inspired meal!

Ingredients

For the soup:

2 lb (900 g) beef chuck or beef shank

2 cans (25 oz/700 g each) white hominy, drained and rinsed

5 guajillo chiles

3 ancho chiles

2 garlic cloves

½ white onion

1 tsp Mexican oregano

½ tsp ground cumin

2 bay leaves

8–10 cups beef broth or water

Salt and black pepper to taste

For serving:

Shredded cabbage or lettuce

Thinly sliced radishes

Diced onion

Fresh cilantro

Lime wedges

Dried oregano

Tostadas or tortilla chips

Directions

Remove the stems and seeds from the dried chiles. Soak them in hot water for 10–15 minutes until softened.

Place the beef in a large pot with the onion, garlic, bay leaves, and broth. Simmer for 2½–3 hours until the meat is tender and easy to shred.

Blend the softened chiles with the garlic, cumin, oregano, and a little broth until smooth. Strain the sauce for a silky texture.

Remove the beef, shred it with two forks, and discard any bones. Return the meat to the pot.

Stir the red chile sauce and drained hominy into the broth. Simmer for 30–40 minutes, allowing the flavors to blend. Season with salt and pepper.

Ladle into bowls and garnish with cabbage, radishes, onion, cilantro, oregano, and fresh lime juice. Serve with crispy tostadas.

Grandma’s Tip: Let the pozole simmer gently so the hominy absorbs the rich chile flavor. Prepare it a day ahead for even deeper flavor!

Juicy, Crispy Beef Birria Tacos Loaded with Melted Cheese 🌮🧀😍

Craving crispy tacos filled with tender beef, gooey melted cheese, and rich, flavorful broth? These homemade beef birria tacos are golden, juicy, and perfect for dipping into savory consommé!

Ingredients

For the Beef Birria:

3.3 lb (1.5 kg) beef chuck, shank, or short ribs

5 guajillo chiles

3 ancho chiles

2 árbol chiles (optional)

½ white onion

5 garlic cloves

3 tomatoes

2 tbsp white vinegar

1 tsp ground cumin

1 tsp Mexican oregano

½ tsp black pepper

3 whole cloves

1 small cinnamon stick

2 bay leaves

Salt to taste

6–8 cups beef broth or water

For the Tacos:

18–24 corn tortillas

14 oz (400 g) Oaxaca or mozzarella cheese, shredded

½ white onion, finely chopped

Fresh cilantro, chopped

Lime wedges

Hot sauce to taste

Directions

Remove the chile stems and seeds if desired. Soak the chiles in hot water for 10–15 minutes until softened.

Roast the tomatoes, onion, and garlic on a hot skillet until lightly charred. Blend with the softened chiles, vinegar, cumin, oregano, black pepper, cloves, cinnamon, salt, and 1 cup of soaking water. Strain the sauce.

Place the beef in a large pot. Pour in the chile sauce, add the bay leaves, and enough broth to partially cover the meat. Cover and simmer over low heat for 3–4 hours, until fork-tender.

Remove and shred the beef using two forks. Taste the consommé and adjust the salt. Skim some of the reddish fat from the surface and reserve it for frying the tortillas.

Heat a skillet or griddle. Lightly dip each tortilla into the reserved birria fat. Place it on the hot surface, add shredded cheese and beef, and sprinkle with onion and cilantro if desired.

Fold the tortillas and cook on both sides until golden, crispy, and filled with melted cheese.

Serve immediately with warm consommé for dipping, fresh cilantro, chopped onion, lime wedges, and hot sauce.

Grandma’s Tip: The secret to incredible birria is slow cooking until the beef becomes tender and absorbs all the rich chile flavors. Never throw away the consommé! Use just a thin layer of birria fat to crisp the tortillas without making them greasy.
