Happy Spring Everyone ! We welcomed this season with a true "Farm to Table" hog fabricating workshop in Eastham MA. at chef/owner Sanette Groenwald's Karoo Restaurant.
On Saturday 3/16 Chef Adrian, and a team of ambitious chef's , and cooks, began to break down the two hogs that Chef Cyr brought back from his families farm in Shapleigh Maine.
With a brisk chill in the morning air the team set to work butchering the hogs and transforming some of the meat into Italian style salumi, while other cuts were left fresh, and still others were cured and will be smoked at a late date.
As it should be, all parts of the animals were utilized, which amazed the people that attended the event. It was a full day that was very rewarding to all who attended.
A special Thank you to Chef Sanette Groenwald at Karoo Restaurant, Chef's Mark Farone and Candy Murphy, students from CSCA and everyone who attended.
