🇩🇪 Bavarian Pork & Potato Soup (Kartoffelsuppe mit Schweinefleisch)

🧂 Ingredients
• 4 slices thick-cut bacon, diced
• 1 lb pork loin or pork shoulder, cut into ½-inch cubes
• Salt and black pepper, to taste
• 1 large yellow onion, chopped
• 2 leeks, cleaned and sliced (white and light green parts only)
• 2 carrots, peeled and diced
• 2 celery ribs, chopped
• 4 medium Yukon gold potatoes, peeled and cubed
• 3 cloves garlic, minced
• 1 teaspoon Dijon mustard
• ½ teaspoon dried marjoram (or thyme)
• ½ teaspoon dried dill w**d
• ½ teaspoon dried rosemary, crushed slightly between your fingers
• 1 teaspoon caraway seeds (optional but traditional)
• 5 cups chicken or pork stock
• ½ cup heavy cream or whole milk (optional, for creamier texture)
• 2 tablespoons chopped fresh parsley
• 1 tablespoon butter (optional, for finishing)
🔥 Instructions
1. Render the bacon:
In a large Dutch oven, cook the diced bacon over medium heat until crisp and the fat has rendered, about 6–7 minutes. Remove bacon with a slotted spoon and set aside, leaving the drippings in the pot.
2. Brown the pork:
Season pork cubes with salt and pepper. Add to the bacon drippings and sear until lightly browned on all sides, about 5 minutes. Remove and set aside with the bacon.
3. Cook the vegetables:
In the same pot, add onion, leeks, carrots, and celery. Cook until softened, about 6–8 minutes. Stir in garlic, Dijon mustard, marjoram, dill, rosemary, and caraway (if using). Cook for 1 minute, stirring until fragrant.
4. Simmer the soup:
Return the browned pork and bacon to the pot. Add potatoes and pour in the stock. Bring to a boil, then reduce heat to low. Cover and simmer gently for 45–50 minutes, until pork and potatoes are tender.
5. Finish and season:
Lightly mash a few potatoes in the pot to thicken the soup naturally. Stir in cream or milk (if using), butter, and parsley. Taste and adjust seasoning with salt and pepper.
