Got some of my School Lunch stockpile replenished last night. I canned 14 Quarts of Chicken Mexican Soup and 6 Quarts of Chicken Broth. My kids LOVE, LOVE this soup. A canning recipe for Chicken Mexican Soup. I came up with this great tasting soup by following safe canning guidelines. I pressure can soup every summer to enjoy through the winter. It is easy and taste great! This recipe makes 7 quarts.

Peanut Butter Granola

2 TBSP Butter or Earth Balance Margarine

1/3 Cup Peanut Butter, Soy Butter or Almond Butter

1/3 Cup Honey

Heat until melted, then stir in

1/2 tsp vanilla

1/2 tsp salt

Mix in a separate bowl

3 Cups Rolled Oats

1/2 Cup Raisins

Pour liquid mix over Dry mix, then bake on a cookie sheet or jelly roll pan at 375 Degrees in 10 Minute increments until toasted. Remove and set pan on cooling rack to cool. Stir occasionally while cooling to avoid clumping.

Additional ingredients as desired

1/2 Cup slivered almonds or peanuts

1/4 Cup Flax Seed

1/2 Cup Enjoy Life Chocolate Chips (Wait until Cooled to stir in)

In preparation for a day or so away from home and my "oh-so-helpless" teenage crew, and to be able to spend a day/night with older children and grandchildren - FOOD must be prepared. LOL. So, I put together a great big venison stew that they can have for supper and stick in school lunch bags for tomorrow. Yummy!

Venison Stew

5lbs Red Potatoes
4 Lbs Carrots
A couple of onions
some celery
2 pints canned venison
1 quart canned tomatoes
A couple handfuls of dried Swiss Chard - crunched up
Salt, Pepper, Garlic to taste
Worcestershire Sauce to taste

That's it - and if you are wondering about the Swiss Chard - it is a magic bullet of nutrients - and If I dry it and crumple it - the kids don't even know its in there - they think it is parsley and I just let them keep thinking that. Also works good added to meatloaf and just about anything.

This is one of the best tutorials I have found for canning dried beans. It is cheaper and healthier to can your own beans. I like to keep several jars canned in different varieties for those days when I don't have hours to watch a pot of beans cook. Since everything at our house is from scratch, having canned beans can greatly reduce my work load on hectic days.

For me, one of the keys to cooking real food is to have a pantry stocked with real food ‘building blocks’ that I have prepared ahead of time.
