For more than 20 years I didn't have a name for my steak seasoning.

The night that started the business I added a couple of extra peppers in addition to kosher salt and lots of it.

So when I sent out the first samples I called it Four Pepper Blend. The name stuck.

When I moved to China in 2009 there was no Mexican food. No tacos, burritos, chips and salsa, queso...

But by the last of my eight years overseas I was proficient at making homemade tortillas and fillings.

This is the origin of ENAK Taco seasoning. A skill learned by necessity.

There’s a drink in Indonesia called kopi jahe. Ginger Coffee.

I thought it sounded awful. Until I tried it.

A few years later, preparing to launch a seasoning blend business I saw someone cook with a chili coffee rub. I had an idea.

It worked in reality. Ginger Coffee Rub.

Father’s Day steak!

Bone in ribeye coated with Ginger Coffee Rub in the morning, allowing the kosher salt to flavor and tenderize the beef while the ginger, coffee, and other spices rested harmlessly on the surface.

Put the oven at 200 for about an hour to bring the internal temperature up to about 115 before a quick sear in the cast iron with ghee. 90 seconds on each side, then rested for ten minutes before slicing.

Just perfection. Warm, ginger spice on the surface, full natural beef flavor in the interior.
