🥩 Flat Iron -- the second most tender cut on the cow -- normally carved thin & served as steak, we cut the entire piece out of the shoulder & smoke it whole like a brisket = very tender & flavorful
🦴 Beef Ribs -- considered "The Best Bite in BBQ" -- massive & extremely rich beef taste
🐖 Spare Ribs -- the traditional rib for Texas BBQ -- more flavorful than baby backs, available on Platters or by-the-rack
