Fall is a great time to break out the slow cooker or the Instapot to make warm and savory stews. Cooking meat in a stew is perfect for cuts that are too tough to grill or broil. The long, low-temperature heating time allows the collagen in those cuts to gelatinize and bathe the rest of the stew in great flavor. Spices from the stew pe*****te into the meat and create the savory flavor that we all associate with cool days.

A chef told me once that BROWN is not just a color, its a flavor. Creating the brown color on meats is important for creating the savory flavors that we love. That's why we brown our meats in the pan before we slow cook our roasts. The high heat makes the sugars and protein in the meats react to create the delicious browned flavor.
