What goes into making the most delicate, delicious salmon patties? I will show you. Im not calling them croquettes as my French friends do because croquettes are typically more bread crumbs than salmon. In this recipe I am using 5lbs of fresh, wild caught Alaskan salmon. You can feel free to use Sockeye salmon which I am sure would be superb...but would be quite hefty on your wallet.
