One of my favorite spring condiments is stinging nettle pesto. I was stoked to learn my favorite farmer neighbor had a little patch & happily harvested it for me. Made with PhilsPharm Garlic, lemon, pecorino/parm mix, olive oil & walnuts- this batch is delicious!!

🫜I love a good beet! One of our favorite local farmers grows these gorgeous Chioggia beets and they are stunning raw. In order to preserve their color swirl & really showcase their beauty, we decided to do a fun take on carpaccio featuring alternating Chioggias and golden beets, dressed with a light champagne vinaigrette, then finished with thinly shaved radish, sunflower micros from , chopped pistachio & finished with agrumato lemon olive oil & edible flowers… a delicious & stunning option for a starter or salad course!

A few menu teasers/dreams:

🥦 Charred Broccoli Caesar - I literally had a dream about this creation after working with our favorite friends … their live fire magic literally feeds my dreams…

🧇Caviar & Cream waffles- definitely on the hunt for a bougie brunch crew to help fulfill my Champagne & Caviar Brunch bucket list…

🐟Tin Fish on Toast- I’ve been fantasizing about curating the ultimate Tin Fish Grazing Table, filled with tinned flavors from the sea, fresh local radishes, bread, uni butter & assorted salts… with chilled buckets of Txakoli and Muscadet (of course)

Needless to say, this winter has my brain creating on overdrive, and craving the reopening of our local markets…
