I have lots of ducks. Big ducks, medium ducks, smol ducks. Ducks who are jerks, ducks who just hate me, and ducks who break my heart. With lots of ducks comes lots of eggs. Everyone who can eat eggs should eat duck eggs.

This is the time of year where I end up with quite the inventory of duck eggs, with a demand that is far behind that of chicken eggs. Come late July, I can't guarantee my regular customers a full dozen due to the heat, so duck eggs really are seasonal. I've been raising poultry for over 15 years and...

Boil eggs early to avoid the heat and enjoy a refreshing egg salad for lunch. You can also create different types of salads such as Cobb, Nicoise, Chef, Spinach, or Potato with eggs as the main ingredient.
Fun hint: Duck eggs are the BEST for Deviled Eggs!

There is a process. The ducks stay up late. I've given up trying to figure out their sleep cycles. I just don't think they have one. It's 10pm and none of the ducks have any interest in falling in line and going into the coop. The chickens always obey the daylight. If I go out at dusk, most are in, ex...
