We’ve talked about each of these machines and what they do many times, but this video explains a bit more into how they interact. These beginning steps are the foundation of every single chocolate bar we make in our collection whether it’s a single origin or an inclusion.
1. Preparation and Feeding: The process begins with bags of winnowed cocoa nibs, which are scooped into a machine.
2. Refining: As the nibs pass through the machine, they are crushed, causing the naturally occurring fat to be released.
3. Liquefaction: Over approximately 30 minutes, this process transforms the nibs into 100% flowing chocolate, referred to as cocoa liquor.
4. Collection: This liquid chocolate flows from a ball mill into a one-ton storage tank. This tank, once filled, acts as the foundational base for all of our chocolate recipes.
