Mushroom #2 of edible species of mushrooms on the bucket list to find this summer, Hedgehogs (Hydnum repandum; other common names sweet tooth and wood hedgehog). They're edible, easy to identify, and love the fall in the Rocky Mountains.

We wanted to find 2 NEW edible species of mushrooms this summer. Shrimp russella (Russula xerampelina) was on that list and this weekend we found LOTS of them! (crab brittlegill, shrimp mushroom, crabmeat russula). Lookalikes have a spicy taste and are not edible.

Found growing wild at 8,000 feet: Cutleaf nightshade, Solanum triflorum. The berries are edible once ripe, but are mildly toxic before ripened. These commonly grow in backyards and fields. Same family as tomatoes, potatoes, and eggplants. 🌱🍅🍆
