Fresh Prep tip: Cabbage

Look for firm heads with shiny, crisp, colorful leaves that are free of bruises and blemishes. Avoid buying precut cabbage. Once cabbage has been cut, it begins to loose it's nutrients, especially vitamin C.

Keep cabbage in an airtight plastic bag in the crisper drawer of your refrigerator for up to 2 weeks. To store half a head or wedge, cover it tightly with plastic wrap and keep it in your refrigerator for up to 3 days. When you are ready to use it, remove the thick outer leaves and cut it into pieces. Wash it well under running water.
