This is not a drill ladies and gentlemen, listen up. There's a new scam going around where you get a message from an account you know and trust. They ask you to follow along, then they ask for your phone number, they send you a link, you follow it because you are a kind and trusting soul, and next thing you know you don't have your Instagram account anymore. Stop clicking links!

This is just a clever rehash of the one a few months back where they were asking for votes for some kind of award. I've already had a couple of my customers get hacked just today.

Please pass this along to your friends and neighbors, your grandparents, your parents, even your kids who think they're smarter than you because they have Snapchat and can do cool dances on tick tock but don't know how to properly use an Oxford comma.

Except when I mix it in with chipotle peppers, cayenne, beef tallow, and butter. And then press it out into a delicious tortilla.

I went and bought a thing.

I've got a birthday coming up, and I'm possibly the hardest person ever to buy for, unless you're me, because then you know what I like. And I'm me, so therefore it checks out that I know what to get me that makes me happy. And knives are one of those things. I spend just a little bit of time in the kitchen behind a cutting board. Good tools make for a good life.

If you've never checked out here's your nudge. He will sharpen anything you've got for a nominal fee, but be careful. Because you might lay your hands on something you didn't know you couldn't live without. He has everything from pocket knives, hunting blades, paring, slicing, cleaving, chopping, you name it. He's not cheap. And he's worth every penny. Hand forged blades, hand shaped handles that fit your hand like they were carved for it. It's a thing of beauty.

I'm in love. (With the knife. But Corey is pretty cool too.)

The first one is available at the Apache Junction storefront on Thursday from 11-6, as well as on Pre-order and in person for the Gilbert Farmers Market on Saturday morning....

Chipotle Beefy con Queso! I brought many hundreds of dollars worth of Cottonwood Reserve aged Cheddar from my previous pals and now new neighbors at the GFM and I'm mixing that with Arizona pasture raised, grass fed beef tallow rendered by and Chipotle pepper flakes, and some super spicy Cayenne peppers. I'm shooting for a nice 4-5 on the Blanco Heat Scale, a nice approachable medium.

The next two will ONLY be available on Saturday at the farmers market, no matter how much you beg and plead and tell me I'm a power tripping despot. (Yes, that's happened.)

Valencia Blues! Dried organic blueberries, Valencia orange infused olive oil from and organic brown sugar. Full on dessert tortilla. Go get some cannoli dip from and go to town. When you get to town, say hi to Johnny, will ya?

And for my corny folks, I'm going simple yet serene. Cholula hot sauce, heirloom White Corn, and sea salt. That's it.

Just want to give a little shout out to one of the new kids on the block, doing things right.

Hector and his lovely wife have a food truck permanently set up on Grand Avenue just up the road from Chilte, with a little outdoor seating area with misters set-up to beat the noon day heat. USDA prime beef is the star of the simple but delicious menu, with fantastic Al Pastor as well. The value for your dollar is unmatched. I've been here 3 times so far and everything has been delicious.

I'm not making tortillas for Hector (maybe someday) and I'm not receiving a darn thing for this post. I just found something tasty thanks to and who would not shut up about this place.

Meet Leia! AKA Siri.

Leia has been my professional organizer\quality control\trainer\keep my head on straight\send me home when I get hangry\birthday keeper for better than 4 years now. She started when we were still in the garage, before I even had an actual air conditioner. Just a couple fans and a swamp cooler in the heat of summer, and space heaters for the frigid winter mornings.

She's a mama to 3 rambunctious chitlins, wife to the Original Angry Irishman (that's where I got the name for the hot peppers and Irish cheese tortilla. I almost called it "The Steve") and my sous tortillera, prep chef, and I would be lost without her.

She also makes a darn good salsa that you can get at the tortilla factory on Thursdays.

If you've ever made a special request, planned on tortillas for an event, or got exactly what you ordered, there's a pretty good chance that Leia is the one who made it happen.

In case you always wondered "Who or what is a Saxton?" (Little inside joke for the crowd)

I know most of the pictures on here are of the big bald guy, but I'm not a one man show. I've got an incredible crew behind me, including Saxton, who is nearing 3 years on my crew. Always a good attitude, go with the flow, stay late when I need him, all around good man.

Saxton served with the US Navy, touring the world on a really big boat that I don't remember the name of, and I thought this picture of him under Old Glory was as perfect as perfect could be.

Flour. (But really good flour. Non enriched, a little stone milled Heritage Grain, locally grown)

Fat. (But really good fat, like extra virgin olive oil, or fresh rendered pork lard from local Arizona ranches raising their animals outside under the open sky, as it should be done)

Salt. (But really good salt, like sustainably harvested from the nearest body of clean salt water, by a local Arizona company.

These three things can make or break a tortilla. Might as well use the best that I can, right?

I'm a bit drained this week, so I appreciate your patience on the late flavor drop. We're dropping production just a tad as well, so please place your pre-order or come to the early to guarantee you get your grubby hands on these tasty Mexican disco biscuits!

This first fella is going to be available at our Apache Junction storefront today (Thursday) from 11 to 6, as well as on Pre-order and in person at the Gilbert Farmers Market on Saturday morning from 7 until gone.

"The Cheesy Garlicky Tortilla of Questionable European Descent" It's a mouthful in more ways than one.
Jarlsberg cheese is a tangy Swiss style cheese made in Norway by an Irish company. So yeah. It's complicated. And delicious. I used New Zealand grass fed butter for the fat, and a nice bit of garlic. Can't go wrong with this one!

The next delight will not be available in store! Only at Gilbert on Saturday, with a few available for pre order.

Whiskey Nanner! This will be a re-do of the experimenti did a couple weeks ago that turned out so amazing. Organic bananas, Maker's Mark bourbon, vanilla, and organic brown sugar, and more butter. I couldn't get enough of this one last time, cross your fingers that I remember how to make it😉

For my corny folks, I apologize, but there will only be the traditional blue and white heirloom corn this week. If I have time and an abundance of energy tomorrow, maybe I'll surprise you.

It's that time again. That time that you've either been anticipating for DAYS, or the time that makes your say "Holy moly it's Wednesday already and I haven't even used up any of the veggies I got from the farmers market on Saturday and I bet the kale is starting to wilt because it's darn near June and I didn't bring my cooler to the market because it was 70 degrees when I woke up to walk the dog, and I forgot that Satan was going to burp on Gilbert at 8:30 am and watch the temperature soar with nothing but the ever present promise of November on the calendar to soothe my soul."

Or something like that.

So anyhow...

Sweet Canela! We've been getting a whole lot of requests for this one so I figure it's time. Organic cane sugar, lots and lots of cinnamon and grass-fed butter. It's like a churro but without all the mess on your fingertips.

(The next two will ONLY be available on Saturday morning at Gilbert Farmers Market, and you can pre-order starting Thursday 8am so you can skip the line and beat the heat.)

Italian Stallion! Sun dried tomatoes, Italian cheese, garlic, and maybe a touch of spice for good measure. Just a little. Don't be afraid.

I've been thinking about this one for my corny folks for a while. I need a name suggestion. It's heirloom White Corn, but with Urfa Biber peppers, cumin and onion. It will have a bit of a Middle Eastern flair to it. Urfa is a Turkish pepper, similar to Aleppo, deep purple when dried, slightly sweet and slightly sour, and a touch smoky. No real heat to speak of. These spices will lend themselves very well to any carne asada, or smoked meat or chicken. Let's get creative!

These adventurous flavors are in addition to our traditional Sonoran style flour and corn tortillas. Top shelf ingredients make for top shelf tortillas. Give us a shot and we think you'll agree.

First and foremost, I'll never be better than your Nana. That's love in those tortillas and I can't compete with that.

But for the rest of them, well... I'm on a first name basis with the people that grow\raise\harvest\mill\render nearly all of my ingredients. And I know they're the best ingredients you can get, hands down.

As we grow, I have to look out for new sources of these top quality ingredients because unlike major restaurant supply chains, the stuff I choose to use is finite. We get lard from local butchers who harvest locally raised pigs. My main source has been Roni up at and 2nd on the list is Nick and the gents at from pasture raised pigs raised by a fella named Josh down by the Chiricahua mountains.

And now I'm thrilled to announce that we'll be getting pork fat on the regular from my neighbors, and long time friends Scott and Christy Heartquist for tortillas going to the Gilbert Farmers Market and Flagstaff Community Market.

With their new USDA processing plant up in the mountains east of Phoenix, they're able to provide me with amazing, pasture raised lard from happy pigs, sustainably raised, cared for, and treated well. It's the best I can hope for.

And honestly, it's this kind of commitment to local sourcing that will keep me from ever stocking the shelves of your local Costco, but some sacrifices must be made.

So yeah. These are a little bit different than what you might pick up at Fry's. And that's a good thing.

Thanks to everyone who made our second ever appearance at the a sellout!

My nephew graduated from highschool on Friday (CONGRATULATIONS HENRY!) in Flagstaff, so Jess and I made a trip up after the Saturday Gilbert Market to help celebrate, and you know I couldn't just not stop by and say hey to Anthony from and crew. Special thanks to Sarah for running the tent and telling every customer about the Tortilla Goodness that just moved up north.

Let's talk about the second picture. I promise, with every fiber in my being, that I did not set this up. I was walking over to get a snack from and saw a young lady playing violin, another lady dancing away, and a pack of OG tortillas perfectly propped up against the curb. I couldn't resist taking a picture.

I'm doing everything in my power to give you motivation to come to the on Saturday (7-11am) and get there early.

I was able to squeeze in a few special projects for this weekend.

CHEEEEPS! The Juan Chip to Rule Them All, made with extra virgin olive oil. Crunchy. Delicious. Limited. Let the FOMO wake you early.

Cheesy Little Devil Chips! We made a fantastic tortilla last week with a smoked habanero Jack cheese, and some chocolate habaneros. But I made too many and we came home with a few. So I took them, cut them up, and fried them in a blend of avocado oil and olive oil. They came out delicious. All the heat with the added crunch. These are half size bags, so I can spread the love around. We've got about 20 available for sale.

Take and Bake O.G.! We do all the hard work, and stop just shy of cooking the tortillas. They are pressed out and ready to throw on your Blackstone or thick bottom steel or cast iron pan at home. It's the next best thing to stand the next us while we're cooking tortillas.

Drunken Monkey Banana and Whiskey Tortillas! Maker's mark, organic brown sugar, a ton of butter and a bit of vanilla. It's one of the tastiest things I've made in a long time. 36 packs available for sale. Don't sleep on this one!

Sometimes when an idea strikes, I fail miserably trying to bring it to life.

Today was not that day. Allow me to introduce you to "The Drunken Monkey"! Organic bananas, Maker's Mark bourbon, Madagascar vanilla, organic brown sugar and grass fed butter. It might be the tastiest thing I've made in a long time. (I've eaten 3 already)

This was a one batch experiment, so I've only got about 40 packs available, no holds, first come first get Saturday morning starting at 7am. No code word necessary, but you do have to ask for them, as they won't be on the table. Can't have the riff raff that don't follow on social media getting their grubby little hands on these😂

Triple Pepper Ajo! Jalapeños, Serranos, Habaneros, and Garlic. All mixed in a delicious flour tortilla, with extra virgin olive oil, and a smack of Desert Death because I can. And I should. And I will.

MooMoo Hatch! Grass Fed Beef Tallow from and Hatch Green Chile Salsa from 505, with garlic as well, because I like garlic.

Oh hey there Lumberjacks. You ready for the tastiest tortillas in Arizona to grace your plate?

Your chance starts this Sunday at 8am at the City Hall!

Anthony, the owner of said that the folks of Flagstaff were in dire need of tortillas made with locally sourced flour, pasture raised pork lard, and delicious all natural olive oil. So we said.... Ok.

Anthony is going to come grab a stack of racks to take north, filled to the brim with The O.G. Traditional flour tortillas made with pork lard, and The Juan, our vegan offering made with extra virgin olive oil. Two recipes, two sizes each, to get you a taste of what you've been missing.

And if you sell him out week after week like I have a feeling you'll do, we might even throw in an occasional Spicy batch. That remains to be seen😉

These will be at the Los Mu***os Salsa tent every Sunday through the summer, so come out, hit an amazing market, and get The World's Second Best Tortillas (only your Nana's are better)

Happy Mother's Day to my mama, the lady that taught me to cook, and to love food, and smile, and connect with whomever comes across your path. She raised 5 amazing kids and not a single one of us went to jail. I spent a few hours in lock up once when I was 20, and my grandmother bailed me out, but hey! I turned out pretty good since then.

FLAVOR DROP!

Canva is having some technical difficulties. Therefore the amazing artwork of Rhonda, drawn by the amazing Jaime of .in.oaxaca with super boring font.

Enough about that.

The flavors!

Everybody loves a cheesy bagel. Especially with Everything But The Bagel seasoning, with garlic, onion, sesame and Maldon Sea Salt. So we're making a tortilla, with this seasoning, and Parmesan Reggiano cheese from Italy for a really really flat cheesy everything bagel.

And in half of them, we're adding fire. Courtesy of Timbo's yet again. (I'm not sure where I'd be without the overall wearing man and his delightfully delicious seasoning blends. Maybe Costco. Who knows. ) The fire is Tim's Desert Death Ghost Pepper rub for a nice, but not too crazy, kick of heat.

Everything is Awesome, and Everything is on Fire. Your choice. These will be available Thursday at the Apache Junction storefront (not everything will be ready right at 11, unfortunately, but should all be good to go by noonish) and at Saturday morning from 7-11am! (Vegetarian)

This next one will ONLY be available at the Gilbert Market on Saturday!

Mexican Cornbread Sopes! Sharp Cheddar, Hatch Green Chile, a touch of brown sugar, and my own special spice blend, in a thick corn delight. Crisp these up with your fat of choice (I prefer a good salted butter) and throw some beans and carne asada on top, and you shall rule the world. Or at least the dinner table. (Gluten free, vegetarian)

Ohhhh hey guys.

It's me! The Big Bald Guy. Just wanted to check in. See how y'all are doing, see what was going on. Everybody good?

Seems the world is always going crazy. Every day is something new to stress out about. And I'm just over here trying to make sure you've got a respite from the strife in your insta feed, maybe a joke here and there, goofy picture, or tasty creation.

I'm not one for talking world events, or politics (unless they directly involve food and our local agriculture and animal husbandry, in which case I might soapbox a moment)

I do, however, make an intentional effort to introduce you to other amazing makers around our state. And not just good products, but good people behind those products. I'm not an influencer. I'm a maker that realizes that a rising tide lifts all ships, and I want to see good people succeed. I want to see my local community discover better options than the grocery store offers. Better for the body, and better for the soul.

So if you're new here, I guess that's what we do here. Make tasty tortillas, and tell people about other tasty things, and put a silly smile on your face in the process.

For my planner people!

We will be at every in May, but there won't be pre-order, or traditional corn tortillas available for the first two weeks. Christopher, the big bald guy (that's me!) makes every single corn tortilla, and manages the Pre-order system, including pulling every order, and I'm taking a little break to give my wrists a rest.

My team will continue to make the finest traditional Sonoran style tortillas this side of the border, as well as a few fun specialty flavors (keep an eye out for Sopes!),

And corn tortillas, and Pre-order, will return in just a few short weeks.

We also might be announcing a fun new outlet for tortillas just a little further north. Stay tuned.

I had some leftover peaches. What would YOU do?

I decided to use a bunch of brown sugar, chai spice from my bearded brother from another mother and a little vanilla to make a delightful Peachy Chai Guy flour tortilla.

1 batch only. No code word required. Saturday morning at the Gilbert Farmers Market starting at 8am. They won't last long. But for you early risers, here's a little treat.

Oh yeah. We made CHEEEEPS! The Juan Chip to Rule the World, to be specific. Limited run, no holds, while supplies last 😎
