People see the plated dish. The table set. Guests smiling with a glass of wine. They don't usually see the five hours before that. A prep day for a private dinner means our team is building a full restaurant kitchen inside someone's home. We're organizing a fridge that wasn't stocked for us. We're adjusting recipes on the fly because the oven runs hot or the counter space is half what we planned for. Every burner is accounted for. Every course is timed backward from when guests arrive. Today is Celiac Strong Day, and we want to talk about what strength actually looks like in a kitchen. It looks like reading every label twice. Thirty years ago, our founder's mother was diagnosed with celiac disease. There was almost no research, no awareness, and definitely no safe options at restaurants or grocery stores. That diagnosis changed everything for our family. It's the reason LiveGreensPDX exists. Right now, advocates are pushing for record federal support for celiac and food allergy research, and it's gaining real traction in the Senate. That matters. Not just politically, but practically. For the people who still get sick because a kitchen didn't take cross-contamination seriously. For the kids whose parents have to call ahead to every birthday party. For the adults who stopped eating out entirely because it wasn't worth the risk. Our team has 45 years of combined experience cooking for people with dietary restrictions.
