Too-thin sauce? Here are a few ways to fix it:

Cornstarch slurry: Mix cornstarch with cold water until smooth, then whisk it into a simmering sauce. It thickens quickly and works especially well for stir-fries, gravies, and sauces where you don’t want to add much fat.

Roux: Cook equal parts fat (usually butter) and flour together, then gradually whisk in your liquid. Roux adds body and richness and is the foundation for everything from béchamel and cheese sauce to gumbo and gravy.

Reduction: Simply simmer the sauce uncovered and let some of the water evaporate. As the liquid reduces, the sauce thickens and the flavors become more concentrated. This method takes a little longer, but it can produce a wonderfully flavorful sauce.

As we move from summer into fall, Virginia orchards are filling up with everything from crisp, tart varieties to sweet favorites. Apples are incredibly versatile in the kitchen too: bake them into pies and crisps, add them to salads, pair them with pork, cook them into sauces, or simply slice one up for a snack.
