COCONUT CREAM LOAF CAKE 🥥🍰
Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup coconut milk
1/2 cup shredded coconut
For the frosting
8 oz cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Coconut flakes for topping
Instructions
1. Preheat oven to 350°F and grease a loaf pan.
2. In a bowl whisk together flour, baking powder, and salt.
3. In another bowl beat butter and sugar until light and fluffy.
4. Add eggs one at a time, then mix in vanilla extract.
5. Alternate mixing in the dry ingredients and coconut milk until smooth.
6. Fold in shredded coconut.
7. Pour batter into the loaf pan and bake for 45–55 minutes or until a toothpick comes out clean.
8. Let the cake cool completely before frosting.
9. Beat cream cheese, butter, powdered sugar, and vanilla until fluffy.
10. Spread frosting generously over the loaf cake and top with coconut flakes before serving.
