• ⅓ cup (80ml) fresh lemon juice
Homemade Lemon Curd:
• 4 large egg yolks
• ¾ cup (150g) sugar
• ⅓ cup fresh lemon juice (about 2–3 lemons)
• 1 tbsp lemon zest
• ½ cup (113g) unsalted butter, cubed
• Pinch of salt
Whipped Cream Filling:
• 3 cups (720ml) heavy whipping cream, cold
• ⅓ cup (40g) powdered sugar
• 2 tsp vanilla extract
Assembly & Topping:
• Extra lemon curd or glaze (thin some curd with a little warm water or juice)
• Fresh blueberries
• Lemon slices
• Fresh mint leaves
• Powdered sugar for dusting

Instructions

1 Make lemon curd (can be done ahead): Whisk yolks, sugar, lemon juice, zest, and salt in a heatproof bowl. Place over simmering water (double boiler) and cook, stirring constantly, until thickened (about 8–10 minutes, 170–180°F). Remove from heat, stir in butter until smooth. Strain if desired, cover with plastic wrap touching the surface, and chill until cold.
2 Bake the cake layers: Preheat oven to 350°F (175°C). Grease and line four 8-inch pans (or bake in batches). Cream butter and sugar until light. Add eggs one at a time, then zest and vanilla. Alternate adding dry ingredients with milk and lemon juice. Divide batter evenly and bake 20–25 minutes until a toothpick comes out clean. Cool completely.
3 Whip the cream: Beat cold cream, powdered sugar, and vanilla to stiff peaks. Keep chilled.
