Yesterday was a bit chilly here in Florida so I made a shepherd’s pie but didn’t have any gravy and didn’t feel like venturing to the store. I came across this easy recipe and this will be my go to from now on 👍

This easy brown gravy is made with beef stock and thickened with roux made of flour and butter! No drippings required and ready in 5 minutes!

🧑‍🍳Crispy Parmesan Mozzarella Chicken

4 boneless skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup grated parmesan cheese
1 cup panko bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1 cup marinara sauce
1 cup shredded mozzarella cheese
Fresh parsley, chopped, for garnish

Preheat oven to 375°F. Lightly coat a baking pan with oil or cooking spray.

Prepare three shallow dishes: one with flour, one with beaten eggs, and one with parmesan cheese, panko breadcrumbs, garlic powder, onion powder, basil, oregano, salt, and black pepper.

Coat each chicken breast first in flour, then in eggs, and finally in the parmesan breadcrumb mixture, pressing firmly so the coating adheres.

Heat olive oil in a large skillet over medium heat. Sear chicken 2–3 minutes per side until golden brown (not fully cooked). Transfer to the prepared baking pan.

Spoon marinara sauce over each chicken breast, then sprinkle with mozzarella cheese. Bake 20–25 minutes, until the chicken reaches 165°F and the cheese is melted and bubbling.

Garnish with parsley and serve hot.
