A late check in as I've been super busy at work, but the Maple Season is over. Here's some pics from the last boil 3/28.

It was a good season. Stressful towards the end, but overall good. The sugar content was better than last year which makes less work (51 gal sap/ gal syrup vs last year's over 60). I had some things break throughout the season which made things difficult, had an awesome mid-season (made some of the best stuff yet) and the end of the season came crashing upon us as it usually does.

I made 15.5 gallons, a little less than last year's almost 17. But I chose to go skiing at Cannon when I had a few hundred gal of sap and well... the sap went bad and I had to dump it...and I ran out of wood, which ultimately led to me pulling the taps. I think I could have at least tied last year if not passed it if the cards were a little different.

797 total gallons of sap
Yielded about 2.33 lbs/tap (last year 2.54)
But that was in 7 boils this year, vs 9 boils last year.
Evaporator averaged 28.4 gal/ hour
Burned 1.66 cords of wood

Looking forward to working some of the kinks out next year. Thank you to everyone who came by this year to hang out, it's super appreciated. If you need some maple goodness, you know where to find me.

Despite lots of issues, I got another boil in last night. My vacuum pump for the upper woods died and the lower woods (same type of pump) is at half vacuum. This about halves the amount of sap unfortunately. I'm limping the upper woods along on another pump for now and have a new pump coming tomorrow. Should be a good day tomorrow. Hoping to be boiling again Friday.

2025 Season has begun!

It was a mad scramble of a week to get things going. We still have at least 2 feet of snow in the woods, making travel without snowshoes extremely frustrating. I had taken down the mainline to the upper woods over the summer to have 2 huge red oaks taken down, so getting all the totes and stainless parts cleaned, getting the mainline re-mounted and tensioned, then fixing any blowdowns, replacing one entire lateral, and finally...tapping was some work. Finished tapping on Friday afternoon and the trees were running as you can see in the video! Still some things to do to get the evaporator going, but looks like first boil will be Tuesday!

Last boil of the 2024 season is in the books. Here's how we did:

73 Taps (31 new this year) all on 2 Aquatec pumps for vacuum
1240 gallons of sap collected
17 gallons of syrup produced

That's 0.231 gal/tap vs last year's 0.184

First syrup of the year was Amber, made 1 batch of Very Dark, and the rest was Dark (my favorite).

Sugar content averaged about 1.55% sugar where as last year it was about 1.9%. This was the major fact of the year for me. That might not seem like a huge difference, but at 2% sugar it takes roughly 43 gallons of sap to make 1 gallon of syrup. At 1.9%, it takes 45. This year at 1.55, it took about 55.5. I had one boil where it took about 93 gallons to make a single gallon since the sap was 1%. So although the sap/tap was awesome, the yield was significantly lower than expected vs any other year. It took a lot more time, and wood to make this year's crop.

We had a new filter press this year, which made filtering a breeze and the syrup has never been clearer. We also joined the NH Maple Producer's Association.

We submitted some of our amber syrup to the Warner Maple Weekend tasting event, and came in 2nd for "Tastes Like Spring."

Still going! Syrup is looking dark, but still tasting great!
