Crispy Mexican Street Corn Fritters
Ingredients:
2 cups canned or frozen corn kernels, drained (or fresh corn, if preferred)
1/2 cup flour
1/4 cup cornmeal
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh cilantro
1/4 tsp cumin
1/4 tsp paprika
1/2 tsp garlic powder
1/4 tsp chili powder (optional for extra heat)
1 large egg
1/4 cup milk
1 tbsp lime juice
Salt and pepper, to taste
Vegetable oil, for frying
Crumbled Cotija cheese (optional, for garnish)
Extra cilantro and lime wedges (for serving)
Preparation:
In a large bowl, combine the corn kernels, flour, cornmeal, Parmesan cheese, cilantro, cumin, paprika, garlic powder, and chili powder (if using). Mix until well combined.
In a separate bowl, whisk together the egg, milk, lime juice, salt, and pepper.
Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. If the batter is too thick, add a little more milk, 1 tablespoon at a time, until it reaches a spoonable consistency.
Heat about 1 inch of vegetable oil in a large skillet over medium heat.
Drop spoonfuls of the batter into the hot oil and flatten slightly with the back of the spoon. Fry in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes per side, until golden brown and crispy.
Remove the fritters and drain them on a paper towel-lined plate.
Serve warm, topped with crumbled Cotija cheese, extra cilantro, and lime wedges. Enjoy your crispy Mexican street corn fritters!

**Lemon Butter Salmon with Crispy Potatoes and Broccoli**
Hello lovely friends! Today, we're whipping up a delightful and healthy meal that's as easy on the eyes as it is on your taste buds. This Lemon Butter Salmon with Crispy Potatoes and Broccoli is a winner for a simple weeknight dinner or a lovely lunch. It's packed with flavor and uses ingredients you likely have right in your kitchen!
**Why you'll love it:**
**Healthy & Nutritious:** Salmon is great for your heart, and we've got those veggies in there too!
* **Simple Steps:** Perfect for when you don't want to spend hours in the kitchen.
* **Deliciously Flavorful:** The zesty lemon and rich butter sauce make the salmon sing!
Let's get cooking!
**Ingredients:**
2 salmon fillets (about 4-6 oz each), skin on or off
* 1 lb small potatoes (like baby Yukon Golds or red potatoes), cut into bite-sized pieces
* 1 head of broccoli, cut into florets
* 2 tablespoons olive oil, divided
* 2 tablespoons butter
* 1 lemon, half juiced, half sliced
* 2 cloves garlic, minced
* Salt and freshly ground black pepper, to taste
* Fresh parsley, chopped, for garnish (optional)
**Instructions:**
**Crispy Potatoes First!** Preheat your oven to 400°F (200°C). Toss the potato pieces with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Spread them out in a single layer. Roast for 20-25 minutes, or until they are tender and starting to get golden brown and crispy. Give them a stir halfway through.
**Prep the Broccoli.** While the potatoes are roasting, toss the broccoli florets with the remaining 1 tablespoon of olive oil, salt, and pepper. You can either add them to the same baking sheet as the potatoes for the last 10-15 minutes of cooking, or steam them separately until tender-crisp.
**Sauté the Salmon.** Pat the salmon fillets dry with a paper towel. Season both sides with salt and pepper. In a large oven-safe skillet (if you have one!), heat the butter and 1 tablespoon of olive oil over medium-high heat. Once the butter is melted and bubbling, carefully place the salmon fillets in the skillet, presentation side down. Sear for 2-3 minutes until golden brown. Flip the salmon.
**Make the Lemon Butter Sauce.** Add the minced garlic to the skillet with the salmon. Cook for about 30 seconds until fragrant (be careful not to burn it!). Pour in the lemon juice and squeeze in a little juice from a lemon slice if you like. Let it bubble for about a minute, spooning some of the sauce over the salmon. If your skillet is oven-safe, you can pop it in the oven with the potatoes for the last 5-7 minutes to finish cooking the salmon through. Otherwise, you can cover the skillet on the stovetop and cook for another 5-7 minutes, or until the salmon is cooked to your liking and flakes easily with a fork.
**Serve it Up!** Arrange the crispy potatoes and tender broccoli on plates. Place a beautiful salmon fillet on top and drizzle generously with the lemon butter sauce from the skillet. Garnish with fresh parsley if you're feeling fancy!
Enjoy this wonderful, wholesome meal! Let me know if you try it and what you think in the comments below. Happy cooking! ❤️ .

**Garlic Butter Shrimp Pasta: Your New Go-To Weeknight Meal!**
**Why you'll love it:**
**Quick & Easy:** Ready in under 30 minutes!
* **Comforting Flavors:** Classic garlic and butter that everyone adores.
* **Healthy-ish:** Packed with protein and goodness.
Let's get cooking!
**Ingredients:**
8 oz pasta (linguine, fettuccine, or spaghetti work wonderfully)
* 1 lb large shrimp, peeled and deveined
* 4 tablespoons unsalted butter
* 4 cloves garlic, minced (or more if you're a garlic lover!)
* 1/4 cup chopped fresh parsley (plus extra for garnish)
* 1/4 cup grated Parmesan cheese (plus extra for serving)
* Salt and freshly ground black pepper to taste
* Optional: A squeeze of fresh lemon juice for brightness
**Instructions:**
**Cook the Pasta:** Bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente (tender but still firm to the bite). Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the pasta well.
**Sauté the Shrimp:** While the pasta is cooking, melt the butter in a large skillet or pot over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
**Add the Shrimp:** Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Don't overcook them, or they'll become tough!
**Combine Everything:** Add the drained pasta to the skillet with the shrimp and garlic butter. Toss gently to coat.
**Make it Creamy (and delicious!):** Stir in the chopped fresh parsley and grated Parmesan cheese. If the pasta seems a little dry, add a splash of the reserved pasta water, a tablespoon at a time, until it reaches your desired sauciness. The pasta water helps the sauce cling beautifully to the noodles!
**Taste and Serve:** Taste and adjust seasoning with salt and pepper if needed. For a little extra zing, add a squeeze of fresh lemon juice now. Serve immediately, garnished with extra parsley and Parmesan cheese.
