As @argentinechef always says: 'I cook with wine; sometimes, I even I add it to the food'. 🍷 Wine is involved in every step of Argentine culinary culture, from the process of cooking to pairing each and every single course: appetizer, salad, main, dessert, you name it.

This is so, because wine is officially the national drink of Argentina. With its more than 220,000 hectares of vineyards, it is the fifth largest producer in the world.

Some of the varietals grown and produced are Malbec, Cabernet Franc, Merlot, and Torrontés among others. 🍇

Of course, Argentina is a synonym excellent meat 🥩 and fine wines. And they are truly the perfect match. 💞

Ready to set off? 🛫 Get away from it all for a moment as we take to the Central and Pampa region of Argentina.

Though this area has received the greatest direct European influence, mainly Italian and Spanish, it is the epicenter of two typically Argentine dishes: asado and dulce de leche, as these lands have cattle in abundance because the humid soils let the grass grow fresh, green and strong. 🌾

The foods that have lasted since colonial times in the region are the following: roasts and barbecues, dulce de leche, locro, stew with caracú, mate (especially the bitter one), fried cakes, roasted cakes or tortillas, among many others. We cannot leave unmentioned the typical milanesas, usually seasoned with lemon juice and which include a variant that, despite its name, is a local invention: the Neapolitan milanesa.

Clear blue skies, the sound of tango notes floating in the air and a juicy, tender piece of beef make the picture perfect postcard of the region. 🍷

Some people say whisky mixes well with everything, except decisions. We say it's always a good decision to have some whisky 🥃

Today we bring you the story of La Alazana, a pioneering Argentine whisky distillery owned by the Serenelli couple (Néstor and Lila).

The company is a pioneer in the cultivation of exclusive barley varieties for whisky 🌄. The varieties grown in Patagonia, and malted in the distillery, give a distinctive character to the expression of 100% Patagonian whisky, together with the peat from its region, which is burned under the barley in the malting process to obtain the different notes of smoked. Other expressions of La Alazana are processed with the best Scottish malts.

Let’s hit the road? 🧳 This Friday we stay in the North of Argentina, but we are moving westward. We travel to the place where the lands become undulating and full of dramatic geographical features.

Of course, its culinary recipes and traditions are diverse and interesting as well. Many varieties of indigenous vegetables are grown in this region, such as potatoes and quinoa. But also, many non-native species are cultivated here: olive trees, vine, walnuts, peaches and citrus fruits.

Such variety of products has allowed these people exploit the world of cooking and explore infinite possibilities. However, the star of the region (and of Argentina itself) is locro: a kind of stew prepared mainly with grains of corn and beans, beef, and vegetables. In this area, the preparation of tamales and humitas in chala is frequent too. White wines, such as Torrontés, make the perfect pairing for overlooking the sunset. 🌄

Deep green valleys and lots of rivers that flow between high mountains in hues of brown and grey set the perfect background for enjoying some locro with some fine wine. 🥂

This Friday we are taking you to the Northeast of Argentina, where the climate is quite warmer. So we suggest you wear light clothes and have a cold drink in your hand for this journey. 😎

The big seven culinary stars of the region are cassava, corn, beans, sweet potato, pumpkin, freshwater fish and mate.

In this part of the country, empanadas fillings vary enormously depending on what each province has to offer. In some places, empanadas have their "tapas" made with cassava starch instead of wheat flour. However, in Entre Rios, the rice empanada is widely popular.

The abundance of water bodies 💦 makes fish abound, some of them with excellent meat: pacú, dorado, surubí. With the yacaré tail that provides tender fillets, milanesas are usually prepared.

A wide variety of desserts and juices let people in awe as the northeast is a region rich in fruits.

Flavory fish, exotic meats, juicy fruits... what else can you ask for? It is the perfect destination for a food lover! 🧳

Good news, this drink is actually said to help combat some illnesses! 👌

Arrope has a syrupy texture as it is made by partially dehydrating grapes and other fruits and heating them until incomplete caramelization.

In many provinces of central and northern Argentina people use with carob, chañar and prickly pear.

Arrope has medicinal uses because the prickly pear has some astringent properties, while the chañar is used to combat coughs, colds and pneumonia.

March comes in like a lion and goes out like a lamb. Grab a glass of red wine to pair with this reading! 🍷

Lamb 🐑 is a meat widely used for roasting or barbecue in Argentina, but there is a region where it is definitely a favorite: the south (more specifically in the provinces of Santa Cruz and Chubut). There, the best lambs are produced, thanks to the fact that the weather is dry. The result is that the meat is low in cholesterol and fat, which makes it highly healthy, delicious and tender on the palate.

It is usually sided with smashed potatoes and some sauce to make it juicy! 🤤 (We know, your mouth is watering just now!)

It is feeling too much like Monday, so we bring you a drink better tasted by little sips. 👌

Although the cultivation of gooseberries is a minority in Argentina, the planted area is concentrated in Patagonia where most of the fruit harvest is used for the candy, ice cream and cocktail industry, including the tasty cassis liqueur (the French name for black gooseberry liqueur) or creme de cassis.

Enjoy this fruity, sweet beverage with some ice-cream! You'll end up floating above the clouds!

Take advantage of the last chilly days of the season ❄️ before the heat arrives and enjoy a nice Argentine guiso.

Historically, this steamy dish has been cooked in big amounts so you can have the leftovers for later (Argentine cleverness). Traditionally it contains lentils, beef and/or pork, sausages, potatoes and a base of vegetables and seasonings (we recommend @nativosc). It is a rich dish, not complicated at all and within reach.

The chef's secret 🤫: let it cook for a while so the meat is really tender. The chef's piece of advice: share some mates in the meantime. 🧉

Monday with M of Muday 😌. This traditional indigenous drink is prepared by fermenting cereal grains.

The most common way to make the muday is with dry corn kernels that are ground and sifted, adding water to grind again. The ground material is made into a dough that is boiled and fermented.

Formerly, the women who prepared it, chewed the grains before kneading them.

An Argentine icon, puchero represents the ideal balance between abundance and perfection (and the perfect prep for a heavenly siesta).

In a large pot add two thirds of cold water. Add the ossobuco, the brisket, the onion, the leek and the celery, all cut into pieces. Add some @nativocs spices, salt, pepper and boil for an hour. Now it is time to cut the rest of the vegetables in large portions. To avoid undercooking, you can follow this order: first the carrots, after 7 minutes add the potatoes and sweet potatoes and, after 5 minutes, it is time to incorporate the pumpkin. After cooking everything for 5 more minutes, place the corn cut into wheels and continue for 7 more minutes. Turn off the fire.

Serve the vegetables and the meat, and pair it with some gorgeous red wine. We promise that after this meal, you will have the best siesta ever! It is guaranteed!
